Santi Taura exudes charisma and charm, talking to guests in a very friendly and polite manner. We chatted about our recent hike around Biniaraix, which has a number of different and well marked walking routes of which the "Barranc de Biniaraix" is a scenic circuit around the gorge. This is also Santi's local area and his running route!
Back to food...! We had the tasting menu with 11 courses which is seasonal and only has local ingredients. There is the option to extend to a further 3 but I guarantee you will not have any space left after this experience is delivered, then again who am I to dissuade you. The courses were varied mixing different meat dishes, with local small poultry, to seafood and playful dessert of which there were 3 courses.
Without giving too much away the food was delicately balanced, with great textures throughout and there was a playfulness in the desserts, our favourite being the hot chocolate and potato cake which came with a toasted and melted smore on top.
I personally love starters and two of my favourite dishes of the night, in the photos was a small bread parcel filled with thrush (it's a cute bird, I've checked) meat, which was just devine. The croquette and soup was incredible, the flavours from the croquette burst into your mouth once you bit through the wafer thin outer shell to reveal a warm creamy chicken and mushroom like filing. Read moreThe restaurant offers the surprise menu. Unfortunately, we did not get a menu card. it was a real surprise. we expected upscale cuisine. The first course was a boring fish broth with cut prawns. We could have bought the panada at any bakery. Then came the "specialties" from the frieuse. Unfortunately only bland and boring. 4 out of 11 courses came straight out of the fryer. The bread was dripping with olive oil, the butter had a few edible flowers. Unfortunately, no truffle butter or salt included. The lamb's sauce pulled a skin. the lamb itself was more of a puree with no texture. The cheesecake was put in the freezer days in advance, including the shell. The extra goodie we ordered (9€ per person) was a melted marshmellow over nutella type cream. The 11 course was a bit of a yes torties, with the yes torty in the original, still beating the offering. There was also a fingerprint on one bar. Furthermore, we were asked to eat the panada and the bar as finger food and only after 2 times request we got to the panada cutlery.
Dirty, rusty cutlery, a plate with a chipped edge and long waits for dessert rounded out a bill for 298€ for 2 people with a wine paring.
Afterwards, we asked to speak with the chef. He accepted the criticism without prejudice and thanked us in a friendly manner.
Who wants to burn his money is right here. A restaurant with ambience, service that is striving and a loveless and bland cuisine you will expect here. There are clearly better in Palma. The price / performance ratio is already...
