Disgusting, disappointing and expensive. Gets two stars because of the friendly service. This restaurant gives a bad name to Nordic cuisine. We opted for the "Nordic experience" menu, at 95 CHF per person, without knowing exactly what will contain. After a so and so amuse-bouche, we were presented with a selection of pickled, salted and smoked raw fish, accompanied by various "dippings". All in all, completely unremarkable and requiring almost no cooking skill. In a touch that foretold the rest of the evening, on the plate there were also little bites of orange. After all the fish, a bit of citrus would have gone wonderfully, but no, this wasn't simple orange, it was brined orange. Imagine having a mouthful of seawater and you'll begin to understand how I felt immediately. "An oversight", I told myself, washing the salt away with water and wine. "I'm sure the delicious fish from the main dish will make it all worth it". I couldn't be more wrong. Imagine going to a place called Fiskebar and eating no cooked piece of fish... The main dish was actually composed of four dishes. First of all, there was an overcooked, rubbery abalone. Secondly, some balls of I don't remember what that were served in a bowl with warm water. The balls had the taste and consistency of uncooked dough. I thought that maybe the warm water was actually a broth, so I took a large spoon of what proved to really just be warm, slightly salted water. We both left the dish uneaten. The third dish was an artichoke with a nice design, but whose extremities were so hard and burned that they became sharp and were hurting my mouth. The dish was bland, oily and under-seasoned. The slices of truffle on top had no business being there, just exposing the overall clumsiness of the menu. Finally, on the fourth dish, some fish! It was french toast in lard with anchovies... It is hard to overstate how oily and disgusting it was. The decision to combine a fat dripping piece of toast with an extremely oily fish is baffling. The anchovies had the same taste as any other canned anchovies. We immediately stopped after one bite. For dessert we had a chocolate dish with hazelnuts, cocoa nibs and black truffle. The chocolate tasted cheap and the truffle was pointlessly added in an attempt to hide the lack of skill and imagination. Overall, a disaster. Although we were only 8 people ,we all managed to have various and very different food taste or allergies :-) Well the very talented manager (Noami from what I recalled ) managed all that with a zero fault , even with a pre arranged menu they managed every in independently. And now let's go for wine list , a very smart and well picked choice, and for once a lot of Swiss wines , nice job on the side of the sommelier . And now before jumping on the food let's talk about the atmosphere. As you can expect from a Northern style restaurant , design is spacious and well picked (we even asked for the tableware brand and got it ), atomsphere is friendly and relaxing . Expect a open kitchen concept with cook to order , there are no problem what so ever with kitchen smell or other disagreements generally linked to that kind of setup . No let's talk about the main subject the food ! There is a lot of subtility in all the dishes , it is a fireworks of tastes and balance , ingredients are fresh (mainly season), prepared on the spot and tastes are incredibly fine and subtile . Although most of everyone on the table had a different choice of dishes (and again the menu was prearranged ), the chef manage to please and fulfill everyone. As the sides continue to come , the wine to flow and the breads saucing the dishes (gosh we could not help to sauce every plate , if thing if we could lick the plate we would have done it ) , it was time to reach the end with the dessert (which was a killer ),one of us did not find it at his taste , no problem, Ludovic our waiter ask the chef to re prepare a dessert only for this guest. Overall a great experience, people might find this restaurant a bit pricy, but in a city were an average pizza cost around 18chf and a burger menu 20 chf , the Fiskebar IS NOT expensive. You get a Michelin start experience so in that order it is way worth the budget . So if you want to spend a special moment with a special person , give yourself a treat and go...
Read moreMy boyfriend and I have been to Fiskebar on a saturday evening to celebrate our anniversary and it was great! The restaurant is in front of the lake so it has a great position, the interior is elegant, modern and cozy at the same time and I think it really match with the cousine. The waiter that was with us for the night was very nice, he explained the wine list and helped us to pick one, I really appreaciated his attention for details and our needs from the very first moment when we booked the table to when we say goodbye. The menu list is small but very interesting, since we couldn't decide what to order we went for the nordic experience plus two extra lobster rolls. Francesca Fucci's cousin is amazing, since the beginning the nordic influence was clear and well balanced. At the beginning of the experience they offered a little entre paired with homemade kombucha (I warn you, there is no turning back after you try it), I really like the cod entre, the balance of the crispy skin, the tasty cod and creamy eggs was just perfect! The most interesting dish was the mix or smoked and pickled fish, in my hometown cousin (Genova, italia) we eat a lot of anchovies/sardines but the the taste and the texture of the one prepared by the chef completely blowed me away. I again appreciated the attention for details, even the little salad leaves garnishing the plate tasted amazing and were actually part of the dish. The main dish is a combination of several "small bites", I loved the soup! The desserts deserve a special note, I chose the strawberry and pepper dessert, extremely good and fresh, exactly what I needed after such a rich dinner, my boyfriend chose the chocolate and black garlic dessert and oh boy! I would have never imagined that such a pairing could work so well. Finally we finished our dinner with some piece of chocolates, an apricot thyme gelè (very good) and we shared a glass of Aquavit, I'm very curious to try their new flavor cocumber and basil.
