I had the chance to visit the soft opening of Paulieās Roast Pork, and itās clear this place is going to be a hit. Located near UT Austin, itās a perfect spot for grabbing a bite and catching a game. The outdoor seating area, complete with TVs, creates an inviting and relaxed atmosphere thatās ideal for hanging out.
The star of the menu has to be their signature roast pork sandwich. The pork is tender and flavorful, packed into a handcrafted hoagie that holds up nicely without being too dense. What sets it apart is the garlicky sautĆ©ed spinach and the Italian Calabrian chilesāboth add just the right amount of flavor and heat. The au jus rounds everything off, adding a subtle richness without making the bread soggy. Every bite was well-balanced and satisfying.
I also tried āThe Bourdain,ā which didnāt disappoint. The crispy mortadella paired with melted provolone on a warm Kaiser roll made for a hearty, satisfying meal. And, of course, a cold beer from the bar is the perfect companion to these sandwiches.
Paulieās has all the ingredients for success: great food, a laid-back vibe, and a convenient location. Itās definitely a place Iāll be returning to over and over. Almost instantly my mind drifted into a reverie of alcohol-fueled shenanigans and half remembered dalliances from 30 years ago that had me feeling, well, quite old. My thoughts were interrupted by my girlfriend suggesting we stop in for a drink. I protested to no avail; apparently the siren song of booze was too irresistible to her. We entered and were welcomed with a sight that had me thinking weād walked into a Roman bath: the entirety of the bar was rapturously eating sandwiches with a relish that reminded me of cats hopped up on catnip. Any possible cognitive dissonance I might have felt upon entering a college bar was swept away by my sudden desire to try one of those sandwiches. We ordered the Roast Pork Sandwich and the āBourdainā then sat at the bar and nervously waited for our bounty to arrive while sipping on not-so-cold beer. We picked up our sammies from the counter and, upon taking our first bites, were transported to a land of ecstasy. Ā Ā Ā Read moreI got to try a preview of Paulie's and I have to say it's one of the best sandwich offerings in town. If you've had the fantastic smash burgers from the Republic Burger truck about 5 years ago, it's the same owner, which should give you an idea about their high quality.
Their namesake roast pork is an homage to the famed sandwiches of Philadelphia; think of John's Roast Pork and Angelo's. The pork is sublimly tender and flavorful, graced with cooked spinach and encased in a perfect crisp hoagie bread. Most shops in town don't give much thought to their bread, which tend to be like squishy foam and brings down the quality of the overall sandwich. But here, the bread is custom made for them, and elevates the sandwich to top tier status.
I'm looking forward to their grand opening so I can try out their offerings, especially their take on a Sloppy Joe.
Paulie's is a great addition to the west campus scene for the students, but is also a destination worthy place for those of us who live...
