Tacos El Korita — Restaurant in Colorado Springs

I don't always post a review unless something makes me. The al pastor burrito at this taco truck Green sauce was bomb AF. The quesabirria tacos are amazing and something kind of rare and hard to find up here and these are done really good.

If you don't know quesabirria is slow cooked stew meat and broth and mixed up with cheese when serving on a hard shell usually fried tortilla then served with onion and cilantro. It's fire and these guys do it well.

The young guy up front was friendly and the taco truck was very clean and lit up brightly. The immediate area can be a bit grungy looking at night due to its location near the freeway and it's positioning on the frontage road sometimes makes for awkward parking, but it is usually open and brightly lit even at night.

Out of all food I've reviewed from here in the springs across the US this can hold its own out there as really good authentic Mexican food. If you could choose only one thing, as of me writing this I would choose 2-3 of the Quesabirria tacos. They're decent sized and really good.

It gets the 5 stars due to its hours, most trucks and food in general that's not McDonald's or similar shuts down in this town at or around sunset, but being able to come here a little after dark and get some great food is...

I got a few of the queso birra and asada tacos. The food was very very delicious, especially the queso birra. Generous portions and came with a free roasted pepper on the aide. All of the hot sauces were solid too (the queso birra came with its own special one for dunking). Food took about 8-10 minutes

Will definitely be back again. Primarily for the queso birra (and to try everything else). It's essentially a cheesey birra taco that is then wrapped in another cheesey quesadilla. Yum!

I would love to try the queso birra were the inner layer is a torta. Crunch was the only thing missing from what is already an outstanding flavor experience (more crunch I should say as the fried cheese that comes out has some delectable crunch to it).

Its safe to say this is one of my top 3 tacos and burritos. I've been everywhere in the country and theres only 3 taco place that stands out the most. One in Las Vegas, one in Phoenix, and this place. I bought from there last year since I'm only in Colorado Springs once a year so when I was coming back I had to stop by. Yesterday I stopped by but it was too early for lunch I think so I had to settle with the other food truck. It wasn't bad but this one right here is the top pick. The steak tacos are very flavorful with good portions. I dont know what they do with jalapeño pepper but its so good. I'm definitely coming everyday while I'm in the area cause after this week I will have to wait for...
