Maeposas — Restaurant in Hot Springs

10/10 RECOMMEND!!! This is my second time here. This time, I got the Primavera Pasta (requested Gluten-Free and Dairy Free/Vegan) & The Signoria/Firestone Pizza (Gluten Free). THEY WERE BOTH AMAZING! The pictures do not do them justice at all!

This pasta? So freaking good. The sauce was super flavorful and all the veggies (spinach, mushrooms, bell peppers, onions) were cooked perfectly. The gluten-free penne had a great bite to it — not mushy at all but also not hard — and the whole thing was just super satisfying without feeling heavy. Honestly didn’t even miss the dairy or wheat.

Now for the pizza! The crust was golden and crispy in the best way — not that unflavored GF cardboard texture that some of them have. It’s loaded with marinara, pepperoni, heirloom tomatoes, buffalo mozzarella and feta. I have now found my favorite gluten free pizza! It tastes exactly like a regular gluten filled pizza.

I shared both dishes with my 3 year old niece, my sister & my boyfriend (they don’t have dairy or gluten allergies) and they loved everything!!! So even if you don’t have any dietary restrictions, you can enjoy these!! (You can order them with gluten and dairy of course).

First thing you should know about this small family business, is that they make everything by hand,from scratch. Customer Service is impeccable, both the cooks, and the front were very attentive, and involved. And we're truly interested in feedback from the community,and very helpful in explaining the menu,and how they prepare the food. The amount of chicken I received with my chicken Alfredo was wonderful by comparison with most "Italian" places. The hand rolled pasta really adds to the subtle flavor of the garlic,soaking it up nicely to make a truly wonderful experience. Next thing I'll rave about, would be the cheescake. As a proficient baker myself, I am truly impressed by the flavor,consistency, and texture they were able to achieve in a wood fire oven. People have been ruined by ultra processed super sweet cheescakes. This is not that, this is the perfect amalgamation of flavors,textures,and subtle sweetness for a truly authentic cheescake,comparable to a slice you would get from a fine dining experience.
