I am assuming that I had a one off experience as others seem to really enjoy their experience. Nonetheless, this was my experience today. Went in as a single diner. The hostess originally brought me to a table that was next to 6 people sat at a 4 person table and then another table on the other side. I said "oh, I'm sorry, that's alot of people can I sit somewhere else". The 6 person table was clearly spilling into what would have been my table space. I believe I was polite but I must have irritated her because she slams my menu down at another table. I was pretty embarrassed about how I felt like she was shaming me for requesting a different table. I almost left and now I wish I would have as i am out almost $30. I ordered a tropical bowl wich was supposed to be jerk pork, coconut rice, pineapple slaw, and spinach. The pork was not cooked properly. The fat was barely rendered so they over compensated by drowning it in a sauce. The pineapple slaw had large chunks of pineapple instead of being shredded and having consistent texture with the cabbage and there was a non-existent vinegar. The spinach was raw but some of it was slimy. Coconut rice was properly made. Stewed collard greens would make more sense in this dish than random raw spinach. Pork probably needed to be cooked a couple more hours. Both pork and slaw were overdressed and it created this brown/white sauce everything was sitting in. Portion was giant; they could focus on quality food and serve a smaller portion and it would be more worthwhile. My server only took my order and gave me my check. Another server brought my food and was very nice. I saw her interacting with her tables and was very pleasant. I was never "checked" on. For the price I expect a better experience and better food. I ordered the Wild Thyme Pasta with the pistachio chicken add-on and thoroughly enjoyed it—flavorful and well-prepared. My wife had the mahi mahi, which she also found delicious.
Unfortunately, the service did not match the quality of the food. Our server, "C" (withheld name out of respect), greeted us promptly and took our order after we were warmly seated by the hostess. However, things went downhill from there. Despite the restaurant not being very busy (around 3:45 PM), our meals took about 25 minutes to arrive, which would’ve been fine if we’d received any communication in the meantime.
C checked on us only once during the meal, and service for dessert and a to-go box was even slower. It took about 20 minutes to get the box, and the dessert came 30 minutes after we ordered it—with no updates or apologies. He even had to ask what dessert we had ordered after bringing the box. Once we finished eating, there was no acknowledgment that we might be ready for the check, and no thank you or closing gesture beyond a brief "thank you."

What makes Kanab unique is the number of establishments like Wild Thyme Café that simply exceed the preset expectations one might have of a small town. Wild Thyme Cafe's menu was exciting, diverse, and adventurous much like the surroundings. We absolutely enjoyed the Chicken Pistachio, a delicious crust and flavorful chicken served with potatoes that were also well seasoned and perfectly cooked (I should say I generally am not a fan of potatoes, and I enjoyed it). On our third night in Kanab while we wanted to try a different restaurant, the one with the most number of reviews on here, that kitchen was not able to accommodate the influx of orders, so after a second or two we did not hesitate to go back to Wild Thyme Café where we knew we would not be disappointed.
