We had a delightful evening at this newly established bistro in Lava Hot Springs. The menu is creative and includes a variety of choices to please any palate. We started with our favorite, Calamari, which incorporated pepperocini in the mix, making for a tangy and wonderful compliment to the popular appetizer. We opted to share the Double Chop as our entree, a large 12 oz. bone in pork chop. It was prepared with a Cajun spice and tomato jam, served with mashed potato, and a medley of summer squash. It was grilled perfectly and the tomato jam put this chop over the top! The blend of flavors was delicious. The dessert menu is just as eclectic here and includes a charcuterie board dessert, fun for a group. Since we were already feeling full, we ordered the Dark Chocolate Brownie Goblet, oh my! The perfect ending! We loved the food but the pièce de résistance of this experience was the people who make this restaurant run like a well oiled machine. Having only been open for about 6 weeks, we were astounded as to how well the staff worked together as though Rouge had been there for years. Our bartender and waitress, Marissa, was very attentive and friendly, and made her job look easy as she cared for the needs of those dining at the bar. Our Black Lava Smash cocktail she made us was a perfect mix. Every staff member we encountered was friendly and professional and the rapport amongst them was one of cooperation and respect. One of the owners, Carol, invited us in and made us feel like family. You'll want to make a reservation, as this bistro is a smaller establishment and can fill quickly, so make plans for that special date night or family celebration and reserve your spot. As a retired couple, we travel frequently and look for those special places that will evoke warm memories, this is one of those places.

This is my second time back! I heard that they had fried sauce so I definitely had to give it a try and I can say this, it did not disappoint. I had to get the brussels sprouts again. They are going to be a staple for me every time I visit. What I noticed this time around was just the extra attention to detail that the chefs take to make sure the food looks great and tastes even better. You can really tell that they care about what they do. I also got the plain Jane burger and there’s not really anything plain about it. It’s still made really great.

The fried bites were perfectly crisp outside, soft inside, and paired with a mix of sweet and savory sauces that actually made you want to slow down and taste each one. The setup felt intentional, from the fresh garnish to the grilled pita on the side. Bonus points for the relaxed bar vibe — perfect lighting, friendly staff, and attention to detail. Definitely one of those “I wasn’t expecting it to be this good” kind of spots. Would 100% come back for another round.

Please have the chefs taste the food while cooking, add salt. The waitress was super sweet, prompt and informational. Thank goodness she recommended Salting our food after we ate the first couple of bites. The chicken parmesan was very odd to have with the bone left in, which unfortunately the bone took up most of the meat that you anticipate with a parmesan chicken, the wine soaked noodles werenot to rave about either woth the sauce mix together it made it bitter like metal. Great take on a Moscow mule but the mutled mint thru me into a mojito vibe more. All in all the dinner was great with a nice comfy vibe and the waitress was...

Honestly such a great dining experience. All the food was fantastic and the service was great. We stumbled upon Rogue while in town and it turned out to the best choice. We ate dinner there the first night, loved it so much we came back for brunch the next morning. For dinner we had the brussel sprouts, beef and mushroom tips, calamari, and asparagus. All of which were outta this world, especially the sprouts! The brunch menu changes every weekend, but there are no bad options. We had the coconut french toast and it was to die for. The owner and staff is amazing! Definitely recommend if you...
