We had a delightful evening at this newly established bistro in Lava Hot Springs. The menu is creative and includes a variety of choices to please any palate. We started with our favorite, Calamari, which incorporated pepperocini in the mix, making for a tangy and wonderful compliment to the popular appetizer. We opted to share the Double Chop as our entree, a large 12 oz. bone in pork chop. It was prepared with a Cajun spice and tomato jam, served with mashed potato, and a medley of summer squash. It was grilled perfectly and the tomato jam put this chop over the top! The blend of flavors was delicious. The dessert menu is just as eclectic here and includes a charcuterie board dessert, fun for a group. Since we were already feeling full, we ordered the Dark Chocolate Brownie Goblet, oh my! The perfect ending! We loved the food but the pièce de résistance of this experience was the people who make this restaurant run like a well oiled machine. Having only been open for about 6 weeks, we were astounded as to how well the staff worked together as though Rouge had been there for years. Our bartender and waitress, Marissa, was very attentive and friendly, and made her job look easy as she cared for the needs of those dining at the bar. Our Black Lava Smash cocktail she made us was a perfect mix. Every staff member we encountered was friendly and professional and the rapport amongst them was one of cooperation and respect.
