I visited RosaNegra Miami with friends to celebrate a birthday, and unfortunately, our experience was tainted by poor communication, dismissive service, and an overall lack of professionalism.
When we called to make our reservation, we asked if we could bring a cake, and we were told yes—without any mention of a fee. Upon arrival, the friend who brought the cake confirmed with the host stand if it was okay to hold it until we were ready to celebrate. Again, no mention of a fee.
It wasn’t until we were waiting at the bar that an employee approached us to inform us of a $7 per person cake-cutting fee. They even admitted that they knew the host stand had not informed us. When we pointed out that we were blindsided by this charge, we requested that the restaurant honor the fact that we weren’t told twice—once over the phone and again in person. Instead of addressing the issue fairly, they insisted the charge still applied.
After requesting to speak to a manager, the employee returned saying the owner agreed to reduce the fee to $5 per person. The issue was never about the money—it was about the lack of transparency and communication. When we asked to speak with the owner directly, we were outright denied.
When the general manager finally came over, he immediately dismissed our concerns, asking in Spanish (without knowing if we spoke the language), “What principle?” and then condescendingly implying that money was the real issue when it absolutely wasn’t. During this conversation, he also claimed that the cake fee was always $5 per person, contradicting what the employee had told us earlier. This made it clear that either the employee misled us or there was a lack of consistency in their own policies.
As the discussion escalated, they threatened to refuse to seat us—a party of 12. The person primarily discussing the issue with the staff then decided to leave, and the rest of us, unaware of what was happening, asked for an update on when we would be seated.
That’s when the general manager smugly replied, "Oh, we're not giving you a table." When we asked why, he said, "Why don't you go ask your friend?" That friend had already left, and we were stunned that one person’s departure would affect the rest of us—especially the birthday girl, whose card was on file for the reservation.
After a ten-minute back-and-forth with the general manager and the employee, they finally agreed to seat us. We paid the cake fee without issue because, again, it was never about the money—it was about the principle.
To make matters worse, while the food was good, the service was extremely slow—it took 45 minutes just to receive our drinks, and everything else took an excessive amount of time to arrive. The environment and the staff did not meet the standards the restaurant claims to uphold, and the experience was inconsistent with what we’ve encountered at their various other locations.
Additionally, the restaurant enforces a strict dress code policy, yet we noticed that many guests—particularly women—were dressed in attire more suited for a nightclub than a high-end dining establishment. If RosaNegra wants to uphold a certain level of sophistication, they should be consistent in enforcing their own rules rather than selectively applying them.
A restaurant of this caliber should operate with professionalism, transparency, and respect for its customers. Instead, we were met with poor communication, dismissive management, and an unwillingness to take accountability.

I went to Rosa Negra Miami for my birthday, excited to celebrate at what I thought was a high-end restaurant since I’ve been to every Rosa Negra in Mexico and they’re all fabulous. Instead, the general manager, Juan Pablo, ruined the experience with his rude and condescending behavior. My friends had brought a cake for my birthday. They called TWICE several days before to make sure it was okay and were assured it was fine. Once there, a lady told them it was $7 pp to cut the cake. They mentioned this should’ve been advised sooner and she goes “the owner told me I can leave it to you for 5” when they requested to speak to the manager the manager said cake cutting fee is always $5. So not only did they not advise them there was a cutting fee in the first place after calling twice, but they also lied about pricing. When they brought it up with Juan Pablo, my friend politely said, “It’s not about the money, it’s the principle and lack of customer service.” His response? “Obviously, it’s about the money.” Sarcastic and dismissive—exactly how a manager shouldn’t act.
To make things worse, when I arrived, he refused to seat us because one of my friends had unknowingly used the wrong word in Spanish. I explained that this had nothing to do with me or my confirmed reservation as their encounter has nothing to do with the person who actually booked this and put their card down for over a week etc not to mention it was my birthday, but he didn’t care. Instead of handling the situation professionally, he doubled down on his attitude and made it clear that he thinks he’s untouchable. When I asked for a supervisor, he smugly told me he was the highest authority there. Hard to believe someone so unprofessional would be in charge of anything.
We eventually got seated, but only because I refused to let my 11 guests walk away from my birthday dinner over his power trip. The food was good, but the service? Ruined by Juan Pablo’s arrogance. A manager should know how to de-escalate issues, not create more problems because of their ego.
If Rosa Negra wants to be taken seriously as a high-end restaurant in Miami, they need to address this. With managers like him, they’ll drive customers away faster than they bring them in. Save yourself the frustration and take your money somewhere that actually values hospitality.

We ordered a variety of dishes, including: • Smoked Margaritas • Catrina • Josper Seabass (the absolute star of the night—hands down the best sea bass I’ve ever had!) • Roasted Sweet Potatoes • Organic Vegetables • “Paraiso in the Jungle” cocktail • Chardonnay (GL Catena la Consulta and GL Sequoia) • Colossal Octopus • Prime New York Strip (14oz) • Caesar Salad with Anchovies • Set de Mesa • Chicharron de Las Ramos • Tuna Tartar • Birthday Dessert (which was a lovely touch)
Everything was beautifully presented, and the flavors were spot-on for the most part. The standout dish was the Josper Seabass—it was simply divine, cooked to perfection! We didn’t love one of the margaritas, but they kindly removed it from the bill, which shows just how excellent their service is.
