I really want to love the place, but the food and service really do not match the 500+ per person price. The menu seems to offer a lot of courses, but three teas are counted three courses and some cold pickles and precooked packaged food are also four courses.
Then coming to the fancy ingredients that would make it a fine dining experience, I think only wagyu beef and fois gras are real, the other two so called fancy ingredients, one is labeled caviar but it isn't - it's some chewy crispy stuff that has a fishy taste; and one is morel mushroom that tastes canned (or fresh preserved).
Then coming to tastes and seasoning that would make a meal delicious, out of the full menu, a sweet sour sauce was used twice, making two savory dishes taste identical (except different textures).
In terms of service, there was only one guy servicing our table, and another woman just kind of walking around the empty restaurant, occasionally passing our table and giving us some look (we are the only diner and only table that evening). There is no synced plating like other fine dining experiences. You have to watch and wait for this only one server walking between our table and the kitchen to bring my plate first, and then my husband's plate a minute later.
Then, ambience and decor. I want to say it's carefully designed and someone put good thoughts into it.
