A Culinary Adventure with Mia!

Omg! Where do I even start? My recent cooking class with Mia was absolutely phenomenal! From the moment I walked in, I felt an overwhelming sense of warmth and welcome. Mia and her lovely niece created an inviting atmosphere that made everyone feel right at home.
The space was impeccably clean and organized, which set the perfect tone for the class. We even donned stylish Puerto Rican-themed aprons that Mia provided, adding a fun flair to our culinary adventure. Cooking alongside a group of enthusiastic people made the experience even more enjoyable—there was no pressure, just a shared love for food!
What truly set this class apart was Mia’s passion for Puerto Rican heritage. She seamlessly intertwined the history of the ingredients we were using with cooking techniques, enlightening us on the origins of every seasoning, meat, fruit, and vegetables. It was a beautiful reminder of how much these elements contribute to the soul of each dish.
We didn’t just whip up sancocho! Mia guided us in making the ingredients from scratch! This wasn’t just a lesson in one recipe but a comprehensive workshop that equipped us with skills for future culinary endeavors. We even prepared a delightful side dish and a dessert—Wepa!
The cherry on top was the finale: enjoying the delicious food we had created together. It gave me a newfound appreciation for the time, effort, and love that goes into cooking.

Read moreI participated in the pasteles class in April. Let me start with these classes are sold out for months so I had to buy my ticket in February for April! When I arrived Maria was so welcoming and assigned us to our tables. She opened the class with the story of why she started the class and memories of her grandmother. She assured us there was no one right way to cook and gave respect to all the elders of everyone’s families who have taught generations to cook. She reminded us that the best way to learn to cook is to sit in the kitchen with our aunties, uncles, grandparents, and parents and talk and understand why they do things the way they do. The class was very informative and special. We took turns peeling ingredients, processing, and mixing masa, Smelling all of the special seasonings, and lastly putting together our very own pasteles! Maria had great food for us to enjoy after all of our hard work. She even thought about all of the recipes we would need to make this at home and sent it to us afterwards to create all of this goodness at home with step by step instructions. While we recognize most processes aren't made for our type of wedding, Maria Bido and her team always made sure we felt taken care of. We chose to go an unconventional route for a wedding caterer so we could focus on an entire Puerto Rican menu that was also fully gluten free due to an allergy. We met Maria at the 116th Street Festival through instagram and fell in love with her food. She remained flexible as the menu was confirmed and adjusted recipes to match our allergies while maintaining flavor and ensuring our guests would have an amazing experience. After encountering rain on our wedding day, the food had a huge part in saving the day for not only ourselves but our guests.
