ALERT! DON’T READ THIS REVIEW WHILE YOU’RE HUNGRY!!! If you’ve ever had an authentic bowl of pho in Vietnam, you would know that the pho here in the U.S. doesn’t come anywhere close to that authentic taste. It’s not that the pho here isn’t good, it’s because the broth is rarely cooked for hours with real bones. Instead, I think most places use packaged broths from the market. I have been on the hunt for an authentic bowl of pho for 20 years here in the U.S. and never found one… until the day I came into Ruby Pho. (I did try Phoholic in California as well, and it was good, don’t get me wrong, but Ruby’s pho is better to me.) My family took a road trip from MD to GA to visit relatives, and we decided to dine at Ruby before heading back to MD. From the first spoon to the very last, I could taste that beef broth simmering, sweet with a crystal-clear base and the light aroma of star anise and charred onion. Oh boy, I was slurping that broth like it was a Slurpee. They even had “nước béo trứng trần,” a type of beef fat broth with a poached egg in it. At other restaurants I’ve been to, if they have it at all, it’s often bland, but Ruby’s “nước béo trứng trần,” was exactly as I remembered from Vietnam. The noodles were perfectly cooked, soft with just the right amount of chew, and the thin slices of beef were tender, bringing out every layer of flavor. It reminded me so much of the bowls I had back in Vietnam, the kind that warm your soul and make you want to linger just a little longer at the table. Ruby Pho isn’t just a place to eat, it’s a place that brought me back home, even if only for a meal. The care and patience they put into their broth, the freshness of the ingredients, and the balance of flavors are what make it truly special. After 20 years of searching, I can finally say I’ve found my pho spot in the U.S. And for anyone who misses that authentic Vietnamese taste, Ruby Pho is worth every mile of the drive. Writing this review right now is making my mouth water again, I just wish they were in MD, closer to me! Haha. I finished my meal with a cup of condensed milk coffee. It was decent and gave me the boost I needed for the...
Read moreFound Ruby Pho by accident just driving through Newnan. Recently opened. Ruby Pho offers authentic Vietnamese food. I like that it is not a one stop Asian flare that tries to offer Sushi, Thai or other Asian dishes.
We were greeted with a smile and our waiter was always attentive to our presence and need.
I had the P1. Pho Dac Biet Special Beef Noodle Soup. The broth was delicious with an authentic Pho flavor. SP5. Bun Bo Hue Spicy Beef Noodle. This broth had a lemongrass flavor (similar to tom yum). Different from Pho but delicious and not too spicy. A2. Shrimp spring roll was delicious and made in the right roll size. I've been to other Vietnamese restaurant where the spring roll was insultingly small and overpriced. Not the case at Ruby's. By the way, all the noodle dishes were very large portions. We had extra bowls to share. S3. Grilled Pork Banh Mi Heo was delicious. Crispy French Loaf with a very flavorful pork filling and fresh veggies. Yum! The Vietnamese Iced Milk Coffee was superb. Decor and restaurant atmosphere was pleasant and relevant. The music wasn't loud. Ample parking. Overall, I was very happy with everything including the price of the food and beverage. I give Ruby's a 5...
Read moreI came here because I thought it was still “Cozy Restaurant”. But they changed the owner. My bowl was ok. I ordered a bowl of Hue noodle soup. The soup was more pho than Hue soup. However, the worst part was customer service. The man was so rude to both customers and his staff. I was sitting there for 5 minutes but no one took my order yet. Looked at the other tables, I realized that people before me at other three different tables were waiting for being taken their orders too. There were about 10 customers at the time but the owner was running around for nothing but yelling at his staff. He was so racist when he talked to his staff in Vietnamese about a female customer by mentioning her “My den”, which is a racist terms that Vietnamese people imply African Americans. I ordered my drink first, but he didn’t make it until I finished my bowl. He didn’t apologize or anything. I know a lot of Vietnamese people who are very nice and polite, but this man is not. He needs to stop discriminating others and shows his respect to his staff too. So...
