First, their front desk was un-manned at 5:09. A couple before us was waiting. We waited for a little while, I then went in to look for a hostess. Shortly a woman with a ponytail, and a man with eye glasses showed up to work.
Don’t believe the front desk hostess‘s claim that “that table is reserved”.
5pm on a Tuesday, the out door section is empty (inside isn’t packed either). When she sat us under the sun, I asked immediately that can we please have a table under the shade, like that one under the umbrella. “Oh that table is reserved.”
When I made reservation, I only indicated outdoor, not sure they’ve a place for the dinner to indicate exactly which table. Sitting under the sun is uncomfortable, so I got up and asked one more time, for a table before a lovely tile mosaic with tiny fountain. “Oh that table is reserved.” When we about to leave, she offered the first table I pointed at. Shortly after, a couple was seated at the table before tile mosaic with tiny fountain. To be accurate, I did ask them if they’ve reserved this specific table. “No.”
Why would she lie: despise Irene which is totally ok, or Chinese or people of color (I’ve experienced this a few times prior…) which is… let’s stop here.
They use Riedel glasses, which is nice - seems everyone in Santa Fe uses Riedel.
I’ve Frog’s Leap Sauvignon Blanc - the vineyard we visited in 2015 - it’s as usual, very good.
Food - we’ve duck: on the sweet side Jetty Jack: like the crispy fried skin
Both entries look chunky, large portion, homey, nothing ‘fine’ about it.
They claim themselves as New Mexican, whichever that means, but I need to add salt and pepper to add some tastes for both entries.
I grew up knowing, so did Joy Luck Club, (both book and movie) that adding soy sauce to a dish is the ultimate insult. I’ll stop here.

The food was terrible and the waiter even worse! To top it off it was my birthday celebration and after waiting forever and ever on my dessert we had to get up from our table and go find the waiter because he forgot to turn our order in for us. Instead of apologizing graciously to us the manager proceeded to come to our table and scream at us that she had removed it from our bill even though it was not their fault!!!! We will never step foot in The Pink Adobe again. Period.
To the owner: You have been misinformed by your staff. I am in no way an unreasonable person and of course I would consider anyone that was unhappy with a mere 9 minute wait foolish. It was my birthday celebration and someone in my party had to go looking for Justin after waiting at least 20-25 minutes with no sign of not only our desserts but of our waiter having the courtesy to check on us or apologize for the delay. He was in the kitchen laughing and visiting with your other employees. Sir, he forgot to turn our order in and then and only then did he do so hence the “9 minute” stamp. NO ONE in our party demanded it be removed from the ticket. Please consider this: if it truly had been only a 9 minute wait why would your manager be so defensive? She stopped before she even got to our table and in a very loud and extremely hateful tone informed us that the desserts had been removed. I did lose my patience at this point because she was so rude. Maybe she was embarrassed about her waiter letting us down but I have never nor has anyone in my party ever asked for something to be removed-that’s not our way at all. The Pink Adobe restaurant menu has changed after new ownership since 2024, blending modern fusion with classic New Mexico flavors. Founded in 1944 by Rosalea Murphy, the restaurant still shines and thrives in its historic rose colored adobe hacienda which inspired its name. I began with an off menu starter, a fresh, flavorful Ceviche appetizer served with chile-dusted chips, a delicious option. For my main entrees, I had the Plato Mexicano ($36), which featured a perfectly juicy seasoned steak, red sauce chile relleno, and blue corned chicken tinga enchilada, all classic elements of New Mexico flavors. I also tried the Enchilada Bar ($24), with chicken tinga enchiladas in red and green chile sauces allowing me to taste both signature sauces over pinto beans and rice topped with fresh pico, guacamole, and drizzled sour cream. Both plates were generous and satisfying. The outdoor patio, lit with soft lighting and light jazz in the background, created a calm, welcoming atmosphere. The patio featured an entrance door that connected hotel guest to the patio. Our server, Tinike, was friendly, knowledgeable of the menu which made it easier to order.
