This Bar's Ownership is Why Bars in America are Dying Visiting The Diller Room in Seattle turned out to be one of the worst bar experiences I've ever had. While they boast an impressive selection of rare Scotch and Bourbon, the excitement quickly wore off due to their atrocious customer service, directly influenced by the owner's inexplicable policies. I asked for half pours of two different premium spirits, given their high prices—which are somewhat understandable given their rarity. Honestly, I never fault an establishment for their prices if they are straightforward about it. Each time I requested a pour, the bartender had to text the absent owner for permission. After pouring the two drams, I casually asked for the total cost and was shocked to find it much higher than expected—the second pour, listed at $45 for a full pour, appeared incorrectly as $70 in their system. The bartender quickly recognized the error and began texting the owner to resolve it. Instead of promptly fixing this obvious mistake, the owner insisted on a bizarre additional fee, claiming half pours cost 25% more than half the regular price, a policy that is both mathematically and logically nonsensical. I reluctantly paid for the first pour, including this unexpected and undisclosed surcharge, but refused the second pour due to the excessive and unjustified price. I never asked for anything free. I was willing to pay half price for half of a pour of the $45 dram like all other whisky bars like Whisky Bar and Doctor's Office. Even the bartender seemed embarrassed by this illogical and predatory pricing, clearly frustrated by the owner's stubborn refusal to rectify the issue. To make matters worse, after all this hassle, the owner texted the bartender instructing "no more half pours," clearly annoyed by my legitimate inquiries about the pricing. It's evident that this owner is driven solely by greed, prioritizing his own profit at the expense of potential customers. Such selfish and dismissive behavior creates an unwelcoming atmosphere that nobody wants to experience. Ultimately, I ended my visit early, tipping the bartender for his efforts despite the management-induced chaos. Owners like this tarnish the industry and undermine hardworking staff. Avoid this establishment unless you enjoy baffling pricing, frustrating policies, and an absentee owner who clearly doesn't understand hospitality.

The décor is a cozy environment for a great place to meet friends for drinks. They have a list of specialty cocktails and top notch bartenders. They are very knowledgeable and eager to recommend options based on your preferences. This place offers food as well. We had the cheese board and it was very tasty. Now on to the best part of my evening. I love Whiskey and let me tell you they have some great pours. Rob has some barrel picks as well. We loved the barrel pick from Russel's and Elijah Craig. We ended the night with a Thomas Handy and a few other amazing pours. Now how lucky we are that the owner Rob was in the house and the best part of my evening was talking whiskey with his guy. He knows his whisky. I make a very good old fashion so he had to throw the gauntlet down and make us one to try. I have to say the best in the city no joke. They make in house the bitters for most of the drinks. Hands down a night I will never forget. we live far out of the city but this will make me want to come at least 2 times a month. It is worth the drive. Come check this amazing gem out. It is great for 1st dates since it has very romantic lighting throughout and the music is a perfect level to have a conversation.
