This is a must-stop if you’re in West Yellowstone. We’re from TX so when we saw the “Central Texas BBQ done right” little phrase on the door, we scoffed and thought ‘we’ll be the judge of that.’ We went on 7/30/20 around 2-3pm after hiking in the park and working up an appetite. At that time there wasn’t a line and ample parking but I should note that another day we drove through WY around dinner time (5-6) and it was MUCH busier. As soon as we entered we were greeted by every employee we interacted with. They make small talk, ask where you’re from, etc. as they’re prepping your order. Our family tried the sausage, brisket sandwich, sliced brisket, mac and cheese, bens, and pickles. Everything from the bread to the pickles was fresh and great! The meat had burnt ends and a little fat (which we like), and was tender and tasted amazing. Some of the best bbq we’ve ever had. The beans and mac were great as well. The sausage was tender and is usually something we have leftover but our fam ate every bit—fantastic flavor. The bbq sauce is tangy and sweet. The hot sauce is more tangy than hot but both sauces are great! The Big Sky soda we tried with our meal was also excellent. Prices are fair. The cost for our meal (2 chopped beef sandwiches, a sausage link, 3 fountain drinks, 3 sides of mac and cheese, and a side of beans came out to be somewhere around -$40-$50, which is honestly less than we spend eating at BBQ places back home. The restaurant itself was clean but they need to move the trash bin from under the hand dryer (it blows up anything in the trash bin when in use) in the women’s restroom. Read moreBeing from Texas I must say i've tried my fair share of BBQ joints. From famous spots you see on TV, ones that routinely make it on the 50 best lists to hole in the wall/side of the road spots often overlooked. Firehole BBQ is one I would put up against some of the greats. Now like with all food its subjective, my family liked some things that I thought were just ok. All I can say is that they take pride and care into making this food and I urge you to give it a try plus you don't need to wait in line 6+ hours to get some.
Brisket 3.5/5 Good but personally not my favorite, it was light on the salt & pepper but my parents gave it a 5/5.
Turkey 5/5 Moisssstttt, tender and had a nice flavor. Not much more you could ask for.
Pork Ribs 5/5 Delicious, falls off the bone and I wish I had ordered more because it was devoured as soon as I put the tray on the table.
Pulled Pork 3/5 I'm not a fan of pulled pork, if you get it make little sandwiches with the bread and sprinkle some sauce on it.
Bison Sausage 4/5 Interesting, i've had a lot of bison burgers but you can really taste the difference from standard beef in this. I wish they had a spicy version or even made a Bison boudin.

Read moreFirehole BBQ was hands down the best food we had during our trip to Yellowstone. Though the food is a bit pricey (~$100 total for a full rack, 1lb of brisket, and appropriate sides), the quality of the food vastly outperformed the food we had in Gardiner, MT (similar cost to feed 3) and in the park.
The moist brisket was well seasoned and very tender, and the ribs were soft and lightly coated with sauce. Coleslaw was the best among the sides, but the corn salad and beans were simple and added variety. Personally, I didn't mind the slices of white bread as they are common in Texas-style bbq, but I figure some people might prefer to have their meat with the buns instead. Hot bbq sauce was tasty.
The pulled pork sold out first, then the ribs. I figure brisket is the easiest to source, given the proximity to many Angus ranches. Seating was a bit difficult to find due to a combination of dinner rush (lots of people leave the park around 7-8) and the rainy weather, but if you buy food and look diligently it shouldn't take long.
