Our tour was exceptional. We started our street food tour at 1800 in 93°F heat, no breeze and a blazing sun. Erica welcomed us all and let us meet each other. Instantly feeling comfortable. Some had dietary and mobile restrictions, she was attentive to it all and put us on the same page. We walked 50 feet and started with a sandwich at Schiaccia Passera and a drink a perfect start. Our tour continued to delectable food choices and more drink! Every place provided some element of cooling. In the midst of that, Erica took our minds off of the heat, with stories and laughter and just outright fun. She listened to our stories and chimed in. It was like walking with a friend that lives here and wanted to show us her favorite places to go. She loves what she does as living here and food and all things Italian, especially as a Florentinian. You are charming and vivacious Erica and we all had a great time. If we could give more than 5 stars, we would! Our food tour through Trastevere with Smit wasn’t just a highlight of our trip to Rome — it was one of the best travel experiences we’ve ever had. I recently took part in a pasta-making class, and it was such a fun and rewarding experience! The instructor was knowledgeable, patient, and explained each step clearly, from mixing and kneading the dough to rolling and shaping different pasta styles. What I really enjoyed was how hands-on the class was—everyone got to try making their own pasta rather than just watching.

The atmosphere was relaxed and welcoming, perfect for both beginners and people with some cooking experience. The instructor also shared helpful tips on cooking the pasta properly and pairing it with sauces, which made the lesson feel practical and easy to apply at home.

By the end of the class, we all sat down to enjoy the pasta we made, and it was absolutely delicious. I left with new skills, recipes, and a lot more confidence in making fresh pasta on my own.

Her passion for Italian cuisine really shines through. She explained every step with patience, humor, and incredible knowledge. The class was hands-on and so much fun. We learned how to prepare authentic dishes from scratch, and Gio guided us perfectly, giving helpful tips and sharing little secrets that only a true Roman chef would know. The food turned out absolutely delicious (better than any restaurant we’ve been to!) and the atmosphere was warm, friendly, and unforgettable. Chef Gio isn’t just a teacher, she’s a true host—kind, inspiring, and full of energy. This was easily one of the highlights of our trip to Rome, and I would recommend her class to anyone looking for a genuine Italian cooking experience. Grazie mille, Chef Gio—you are amazing! 🍝🇮🇹

She did a great job catering the conversations to our interests and curiosities, and had such a positive attitude throughout. She even sent us an entire list of customized recommendations after the tour ended! Overall, we would definitely recommend this tour to anyone visiting Florence who loves food. It was the perfect way to try a variety of traditional Florentine and Tuscan cuisine (+ wine!!). Carpe Diem was also very easy to work with. We were notified the day before our tour that our guide was sick and couldn’t make our scheduled time but they were proactive in suggesting alternatives and getting us rescheduled.
