I went to this shop to buy pecorino romano and guanciale, the guy there was happy to know I wanted to cook this dish and we spent some time talking about food/cooking and he asked me about typical dishes from my home country,etc. He was very friendly.
He showed me the pecorino and made me try it first since it was the store policy, the cheese was good and he offered me to vacuum pack it but that wasn't necessary since I was going to use it the same day.
He also showed me different types of guanciale and recommended the one that was better for the carbonara.

This shop was different - Flavio and Nico were knowledgeable, friendly, and packaged our purchases well for our trip home to Australia. They were passionate about everything they sold, and honest when they couldn't answer something. After mentioning we couldn't take cured meats home due to biosecurity laws, they continued to offer us samples of meats simply to provide good service.
