So unhappy. After polling multiple people looking for a skin-on pork loin, Western Daughters came highly recommended. I was especially interested because they're woman-owned. Spent $130 for a pork loin for a special recipe for grandma's last (probably) thanksgiving. They were super friendly via email and phone, took instructions for how we wanted the skin scored. Lines straight across about 1/2-to-1 cm apart.
We picked it up today and got it home and noticed the skin is cut in diagonal lines about 1" apart. Tried calling over and over and over again, and they don't answer their phones, which wasn't a big deal because we only live 6 miles away, so I drove it back over here. I fully expected them to tell me they couldn't do anything to fix the issue regarding the fact that they cut the lines diagonally, but I expected them to at least help me out with cutting additional lines in.
They won't. It's a health code thing. Huge bummer. Especially considering it’s still in the vacuum pack.
I spent $130 on this cut of meat. It's wrong. I could have picked up some cheap cut of meat and done this myself (but really no, I couldn’t – I’ve never dealt with skin-on pork, I have no idea how deep to cut, I haven’t had my knives sharpened in a while, I have no idea how to fix this… that’s why I spent the extra and ordered from a real butcher). I spent $130 expecting it to be done per the order. Why spend the extra? Especially if they won't make it right. Don't waste your dollars if they're not going to stand behind their product...

Everything about this place is top tier. I ordered half a hog share and I was impressed with the entire process start to finish. When you order a hog share or cow share from farms, they generally don't give you all the options and level of detail that you get when ordering through WDB. They go into a lot more detail about your cuts, your options and generally just level set expectations to avoid any surprises at pickup. These extra considerations are greatly appreciated. Every cut was FRESH, vacuum sealed and labeled. When you order from a farm they usually freeze everything. I thought the fresh element was very thoughtful.
When I picked up my order I asked a slew of other questions about the beef they sell and Griffin was patient and extremely helpful. I've been a customer of WSD over the last 8 years or so and I'm always impressed with the consistency of the products they sell as well as the knowledge and expertise of their staff. Read moreMy wife got me 5 pounds of beef plate ribs for my birthday. She is vegan and told the person working the counter that she didn't really know what she was looking for and they helped her out.
When I opened the package to start smoking, I noticed that there was a lot of fat and not much meat on the ribs. I trimmed a little bit of the fat off, but didn't want to trim too much as there wasn't much underneath.
After cooking and cutting, I realized the ribs were approximately 70% fat. After eating the rib with the most meat on it, I weighed the meat from the rest of the ribs and it came out to 333 grams. Being very generous, I'll say the first rib had 300 grams of meat on it. That totals to about 1.4 pounds.
I'd like to give the benefit of the doubt, but it is very disappointing to pay $80 for beef ribs and only get 1.4 pounds of meat. I can't help but feel that my wife was given the portion with barely any meat on it because she doesn't eat meat and didn't know what to look for.
