Today my life changed. Visiting my sister and brother-in-law from Georgia, we decide steaks for dinner. Wanting to splurge he decided to live dangerously and purchase the "Dry Aged Prime" Ribeyes. I was niavely unsure of this because I figured all steaks are created equal. As I write this with new vigore in my once sad life I realize how udderly mistaken I was. As the knife sliced the first cut there was something different, the smoothness of it was intimidating. My normal stab, jab, and tear wasn't needed; I was lost. Then it happened, it was an immediate change. I took that first bite and my heart stopped briefly. He swore the only seasoning was salt and pepper, but how could that be? The immense flavor overtook my senses and the soft, buttery texture altered my perception of the world. As I continued eating the exquisite serinity of art, new life dreams unfolded before me. Next week I'll be travelling to India so I may, also give thanks to the beloved bovine. But then it came, the inevitable last bite. Darkness befell me. Depression welled up inside. A tear formed. Read moreToday was the second time I have been to this butcher. The first time was about a month and a half ago when I decided to check them out for a brisket. On that visit, the butcher Jordan was exceptionally friendly and helpful, and not only did he take time to give me some pointers and recommendations, he also did an amazing job of trimming the brisket for me, all within 10 minutes of closing for the night. Today I wanted some ribeye steaks. Instead of going to the wholesale club, I decided to stop by again. One of the associates was quick to answer questions and make recommendations and I settled on a couple of three packs. While waiting to pay Jordan recognized me and came out from the back to say hello. I was so impressed that a store full of people had zero weight and the butcher was happy to take the time to personally grief me and several other customers. He was exceptionally friendly and upbeat, chatted for a few moments, and wished me well. As you can see, the results were spectacular! While being fresh and hand-cut and locally sourced is awesome, and in addition to the amazing cuts of meat, what has won me over has been the exceptional attitude of Jordan and the rest of the staff. Read moreI had herd of this place a couple of times through some friends. Living about an hour and a half from Pensacola, I did not have the chance to stop by this place. The opportunity came and I stopped by to see what the fuzz was about. I bought a Wagyu, Sirloin Cap (Picanha) AA 6-7, Ribeye and two types of sausages (pineapple sausage, cheese and jalapeño sausage). Man!! the Wagyu Picanha was amazing! The marbling, the softness and the quality were on point. Expensive, but a nice treat for someone who can appreciate a good steak, well worth it. The Ribeye was on point as well, my favorite cut with nice marbling, tender when grilled rare and juicy, can't say enough about the quality. The jalapeño and cheese sausage was real good as well, definitely will get it again. The pineapple sausage was not of my liking, not that it was bad but the sweetness just wasn't for me.
