Pizzeria Bros (Old Montreal) — Restaurant in Montreal

We had a quick meal at Pizzeria Bros and I'll start with the pros: very quick preparation, nice menu selection with either DIY or house-designed pizzas, and I feel quite reasonable prices (unless you add a ton of ingredients which wouldn't be advisable anyway on a thin-crust). Affordable wine, and decent for the price.

Service was well-intentioned but somewhat disorganized; we had to repeat a request for salad 4 separate times, and the type of wine twice. The staff all respond to everything you say with "that's noooooo problem" which after the 10th time wears a bit thin... almost like it's a script. As we were leaving we said thank you to one staff member near the door and got a dreamy "Enjoyyyyyy...." as we walked out. Either they're tired AF or need a break.

The real cons were slightly soggy/chewy crust on the regular dough and most importantly the state of the ingredients in the counter. Because everything is in little pots right next to each other, you get cross-contamination (e.g. little pieces of meat in the ricotta). This is really not ideal whether for allergies, dietary needs such as vegetarian or vegan customers, or religious restrictions such as kosher or halal. Especially when a restaurant goes out of its way to offer those kind of options (e.g. a super-great gluten-free crust according to multiple friends) they should be sure things aren't mixing & matching in the prep area.

We were visiting the area for a concert and arrived late on a Saturday - the area was super busy and we were finding it difficult to find somewhere that was overly fancy but still yummy. We stopped in here (not knowing what to expect) and were very pleasantly surprised! The staff were extremely friendly with us, they were quite busy but were still understanding that we weren't sure exactly how or what to order. After ordering we watched the first person in the line pull out fresh dough and prepare the base, followed by fresh (and delicious) ingredients being added. We ended up waiting a little extra because they accidentally overcooked the first one BUT they didn't try to serve it too us - the main chef saw that it wasn't up to his standards and started it over without us asking. We also added something to our past the point where we were supposed to order and the staff were super friendly with out ignorance. On top of all this - the pizza was DELICIOUS!!! We stopped in here for a bite to eat while we waited to go and see Aura at Notre Dame. Based on the reviews, I was eager to try this place, as I am a big aficionado of thin crust pizza. I was disappointed when I got in to the restaurant, and saw that rather than having a wood fired brick oven, they instead were using several table-top electric pizza ovens!! Given that we were on a tight timeline, we decided to try it out anyway, and I am very pleased that we did! First off, the servers were friendly, and fluent in English. I ordered the margherita (or whatever they named their version of this classic), and I was pleasantly surprised! The crust was well cooked, with the right consistency and thickness. The sauce was tasty and fresh, but not overpowering (suggesting it did not come out of a can, unlike some other pizza spots), and it was a good pizza. I did find it odd that the cherry tomatoes and the basil went on AFTER the pizza came out of the oven (which cooled the entire pizza), but I think that is a Montreal thing (or perhaps even a Quebec thing).
