Shrinkflation has hit this once great Tsukemen restaurant hard. Previously one of TST’s great value for money lunch spots, the quality has unfortunately fallen off hard in recent years. Comparing to the same lunch set in 2019, the bowl of noodles and dipping broth have both shrunk, the softboiled egg and green onions are gone, and we went from two generous slices of chashu pork to one wafer thin slice. Even the broth does not taste as rich and flavorful as it did in the past. See the photos from 2019 vs 2025 for yourself. I appreciate the efforts to keep prices little changed but at a certain point it’s better to hike prices rather than keep cutting quality. This point has been passed for Mita Seimen. Sadly can no longer recommend, but as a customer for 6+ years I hope they turn can it around.

You can choose small, medium, large noodles-140gm, 210 g, 240gm size, same price. I chose large which was not really that big a portion. Noodles was quite good, al dente. Few bamboo slices, slice of pork chau siu and a lump of pork belly, soft egg, seaweed, green onions. Standard tsuekemen. Dip in thick and just slightly spicy soup. At the end you can ask waitstaffs to bring you a pot of hot broth in a thermos to dilute the broth, turn it into soup. Service was super fast and efficient. CASH only.

Lucky to have a waiter speaking the least to us! No greeting, no thank you. The restaurant was very quiet, good for customers! Other waiters and waitresses and the chefs did not take much. They did not need much communication. Quite unlike other Japanese restaurants with staff greeting each other while working, this Mita was extraordinarily static. We pardoned the waiter for the 2 choices of noodles he mentioned (our bad)! We just could not get what he meant. Perhaps he was very tired. The food was okay. The ramen did not have many choices but tasted okay.

Delicious, highly intensely flavoured tsukemen style ramen (instead of typical ramen combined with the broth, it is placed aside to be dipped into when eating each bite). The noodles had a nice Al dente chew to them, and you have the option to choose between small, medium and large portions, but theextra large portion is more expensive. The marinated egg was slightly overcooked however, which was a little disappointing considering how good everything else is. There was also only one slice of chashu , very well marinated , but I would've liked it if they gave a little more. Extra chashu will cost you $12 per slice, or $28 for 3 slices.
