I don't even know where to start with this place... Wonderful food, atmosphere, and a rock star team.
Starting with the food, their thoughtfully created menu creatively brings together flavors, textures, and local food influences in a beautiful way. I had the duck for mains, swordfish cerviche, and beetroot cake dessert. The swordfish cerviche with lemon blew me away and was the best dish I've had on my trip so far. It's marinated for a few days and served with mayo wasabi for richness, tomato marinade for a bit of sweetness, lemon caper jam for tartnesss balanced out with savoriness, and topped with lightly pickled cucumbers for a refreshing crunch, and dehydrated olives. It sounds all very counterintuitive pairing but it works and the flavors marry together amazingly well.
The menu goes so far beyond the typical spaghetti and risotto standard menus that dominate tourist areas and really sets Restoran K.uzina apart. The food is also well prepared technically and followed by a beautiful presentation consistent with what you'd expect to find at higher end restaurants but with an extra bit of flare.
Next the atmosphere. There is cozy indoor dining area and patio. They are right off the square and centally located, but just tucked away enough around the corner to offer a quiet oasis in the center.
And finally, the staff. Holy cow, where did the restaurant manage to poach this team of rock stars from? The wait staff had a full house inside the entire time I was there and since I was the only table outside due to the less than ideal weather, my waiter Stipe had to separately check on me which can be hard to do with a full house and just 2 servers. They somehow managed to provide an exceptional level of service and attention to means to all of the other tables. There is no confusion in how experienced they were, in their ability to describe the dishes, the flavors, providing recommendations and pairings, all what you'd expect at a nicer restaurant, but they are also incredibly warm and genuine and personable. It's also clear that they personally cared about providing exceptional service and are invested in the vision they are building with this restaurant. Can't wait to come back and try this restaurant again on...

I ordered the amberjack with lemon, a dish that reminded me in flavor and texture of fresh mahi-mahi, firm, juicy, and bursting with delicate ocean freshness.
The preparation was flawless, the fish was perfectly seared on the outside, tender and moist on the inside, with the lemon adding just the right amount of brightness to elevate every bite. It was paired with potato au gratin, which was rich, creamy, and perfectly baked with a golden, slightly crisp top that added a satisfying contrast to the tender fish.
The plating was as elegant as the flavors, minimalistic yet sophisticated, letting the quality of the ingredients speak for themselves. Every bite felt like a perfect balance of textures and tastes, the kind of harmony you’d expect from a Michelin-starred kitchen.
It is on the pricier side, but for the quality, execution, and overall experience, it’s absolutely worth it.

Read moreWhat a disappointment. I was really looking forward to trying this restaurant whilst in Split, as it has a Michelin Bib Gourmand - but I think it might be time for the inspectors to visit again!
The service was slow and the waiter seemed stressed. In took 35 minutes from ordering to our starters arriving (cold starters too). We then waited 45 minutes for our main course, and another 12 minutes after finishing for the waiter to notice we were done and clear our table. After waiting for almost 15 mins to see if we'd be offered a dessert menu, more drinks or perhaps coffee, we flagged down a waiter who was clearing and emptying tables (rather than paying attention to the customers still there) and asked for the bill.
The food itself was good - although they could have been more imaginative when it came to dietary requirements. The substitutes were lacking.
The vibe was interesting. They had a DJ which was good, if not a bit unexpected for a restaurant. But it meant that plenty of passers by were stopping and asking for drinks, and being turned away (or in a few cases completely ignored) by staff because it's a restaurant rather than a bar.
Overall K.uzina has the potential to be great, but the service hugely...
