Fantastic soups, very good gyoza and onsen egg! Service and decor is a little basic, but that is my only gripe. Though we can see them grilling the food ,ventilation is sufficient that you dont smell like your food on the way out. Highly recommend the tonkotsu ramen and gyoza. Onsen egg was perfectly done too and is a rare find. Service was great with nice recommendations for drinks. The sencha surprisingly came in a proper teapot complete with a spill tray, which was a nice touch. The tonkotsu ramen had a thick broth with just the right balance of saltiness. The two huge slices of chasiu were tasty enough to not be overpowered by the broth and there were generous amounts of corn, bean sprouts and, some slices of bamboo shoots.i particularly like the fact it comes with half a stewed egg with a runny yolk. The broth could have been hotter but that is really splitting hairs.noodles were good enough but could be more springy. And I saw that they are cooking all food for delivery but not for us. We ordered food at place that we will eat in restaurant. So I was waiting until 12:40..and then finally asked the waitress where is our ordered food that we already waiting half hour. And he said that just pleas wait. Then he come back and said sorry but there is some problem with system we didnt cook your oder. Read moreService was wonderful, I was quickly shown to a seat and given the menu. I ordered the shoyu ramen, hoping for a delicious experience like at home.
The chashu was good quality, but it was a bit overcooked and chewy.
The ramen was overcooked, too soft and slimy.
The broth was milky. Ideally shoyu broth should be clear. (Milky broth is often a sign of overheating, but I don't taste the metallic flavor of boiled broth. My theory is that the milkyness is from starch that came off the overcooked noodles.)
Seasoning was perfect.
Egg was very well cooked, had that perfect custard-like consistency, but it could have sat in the soy-mirin brine for longer. Not much flavor actually made it to the egg.
This place had lots of potential, it's a beautiful shop in a good place in town, but they need to step up their ramen game to live up to the greats.
I would recommend looking to pho to satisfy your noodle cravings in Prague for now.
