Don’t believe the hype: just try a BMO (bread bun with butter and cheese)… it is soo disappointing! Extremely dry and not very tasty cheese.
And that, while visiting a bakery at 8:30 in the morning. True disappointment.
I know that scale can limit your quality. Here we have the best example.
The sesame city loaf had a great roast caramel note in the crust, but the crumb was already so dry that I thought I’ve got a bread from yesterday.
Otherwise : lots of signs of careless staff/leadership. After all Hart is now a bakery chain, without any focus on detail and craft anymore: The interior, despite it being only 4 month old, shows heavy sign of wear or careless attention to details. Lighting without any system. Empty shelves. Broken trash bins. Random products “growing” everywhere. Nothing is optimized for the use, just done 50% and left behind.

Read moreHart is yet another bakery started by ex-Noma baker. I tried one of their more famous pastry, a cardamom croissant (42DKK) and flat white (45DKK). As the name implies, unlike traditional cardamom sweet bun, this one used croissant dough, with the texture almost similar to kouign amann. Pretty unique experience and I appreciate the fragrant cardamom. If there’s criticism from my end, it’s that I felt that the croissant was slightly too burnt. It’s also nice that compared to other famous bakery, Hart has almost 10 branches in Copenhagen, which helps distribute the crowd😅. Flat white was also quite good with strong floral notes. Read moreThe service was kind, but the cardamom croissant was too greasy for me. Unfortunately, I felt more melted butter in my mouth than real pastry. Don't forget to put a lid on your coffee because I was sitting on their bench in front of the cafe and some liquid from the roof dripped directly into my coffee, so I had to throw away the unfinished coffee:( (I know it's my fault, but the coffee is too hot, so I didn't put the lid on).
