After a third person recommended La Maison Carrier ("go to the farmhouse restaurant rather than the Michelin at Hôtel Hameau Albert 1er") we booked a table for Sunday eve. Rustic and warm, La Maison is elegantly casual (as opposed to casually elegant;) and polished, without being stiff. There are flourishes of service and tasty treats (the filet of my fish from its bone at table; charcuterie to start; petit macarons to finish), and a central fireplace warming homemade pies. Blue-checked tablecloths rest over white linens, under flattering lighting aside paintings of the Mont Blanc massif. The dining areas are intimate, but not crowded, branching away from the central chimney like a starfish -- and feature a few understated "stars". I started with the herring followed by the "meunière-like" Dover Sole accompanied by steamed vegetables and smoothly whipped potatoes served in russet-red ceramic French crocks, while my counterpart chose oysters followed by the beef (both the fish and the beef suggested by our server from the daily specials menu). To go with both I requested a 2016 Château de Chamirey Mercurey Premier Cru (a red Burgundy Pinot Noir), which I was told was the last in the cellar, but they have an accessible wine list with lots of lovely Savoie favourites too. If you're staying in Chamonix this is worth a visit. 🥂

I had an entree which I adored that was egg, cream and cured meat. The serves were ample. We were recommended to the restaurant by our Airbnb host. The little extra things they gave us at the beginning and end of the meal were very tasty. As you no doubt realise from other reviews, they have an amazing dessert buffet called ‘Grandma’s tarts’ - all the French desserts you even dreamed of. People came into the restaurant looking serious but after the dessert buffet they were all smiling. I liked the fresh cherry tart and the oeuf en neige best. We felt the meal was good value.

Everything was delicious, we were confused and thought this was the Michelin star restaurant which is also associated with the hotel - and we were surprised to find out it was not. The ambiance was so cozy, it was like a cozy chalet cabin vibe. Five outta five.

The restaurant atmosphere on the terrace was great! The entree was delicious (oeuf mimosa with tuna tartare), and the fish filet was good, but I would have expected a little more for the level of restaurant La Maison Carrier stands for. What was a bit troubling to me was the service. All 3 guests ordered a glass of red wine, and we did not get our glass of wine until the main course arrived. Then when the waiter brought the wine to our table (3 glasses, one per guest), he spilled one of the red wine glasses on 2 of the guests which stained both of their sweaters and pants/skirts. I understand that accidents happen, but it is the way this was handled that has left me a bit disappointed and really ruined my experience at the Maison Carrier. Other than the waiter apologizing and letting us know that this was his own doing, there was no compensation whatsoever. I found this very disappointing, and I was clearly not looking for a free meal, but a simple gesture like comping the 3 glasses of wine or offering free coffees or simply offering to pay for the dry-cleaning bill, would have been appropriate in my opinion. The waiter brought over a hot wet towel and that was basically all that happened. One of the dinner plates was full of red wine and therefore was replaced about 5 minutes later which led to all of us not eating at the same time, and a new glass of wine was brought out within minutes. For a restaurant of this caliber, I would have expected a little more, and again I was not looking for a free meal, and understand that accidents happen, but in my opinion, it is the way accidents are handled that really leave a favorable...

Fréquentant l'établissement depuis pratiquement ses origines, le cadre est parfait, dans une ambiance de chalet avec une décoration soignée "montagnarde". Un point à voir absolument est la cheminée dans laquelle le lard et les saucissons sont fumés (levez la tête un peu après l'entrée). Lorsque le temps le permet, prendre le café sur les tables dans le jardin est magique devant le Mont-Blanc. La petite salle à l'arrière est cosy, et si elle ne bénéficie pas de la vue de la salle côté jardin, elle a l'avantage généralement d'une ambiance plus feutrée.

Concernant la cuisine, je trouve que le dernier chef embauché est pas mal dans la continuité, avec une touche de modernité. Un bémol selon moi, mais je ne retire aucune étoile pour cela, est l'assaisonnement pimenté récurrent dans beaucoup (trop ?) de plats. Un peu occasionnellement c'est bien, mais cela donne une touche en retrait lorsque l'un des convives ne supporte pas bien cela. Lors de notre dernière visite, dans le menu il y avait assaisonnement ou au wasabi ou au chili pour le choix des entrées. Il aurait été souhaité avoir un des deux choix moins relevé. Mon conjoint a moins aimé qu'habituellement de ce fait. Lors d'une autre visite, c'est le piment sur la tête de veau qui était plutôt décalé je trouve, alors que la sauce est toujours aussi bonne, un saupoudrage de piment par dessus me semblait de trop. Cela dit la qualité de la cuisine n'est pas en reste. La cuisson des poissons est parfaite, saisie à l'extérieur et tendre à cœur. Le glaçage des sauces flatte autant le regard que les papilles. Les accompagnements sont soignés et se marient très bien avec l'ensemble. Comme dit, la touche de modernité du nouveau chef apporte des propositions audacieuses et savoureuses. Ne vous y trompez pas, nous sommes bien dans l'antichambre du restaurant étoilé de l'Albert Premier. Si la cuisine est ici dite de pays, la qualité des fournisseurs est incontestablement à la hauteur d'une clientèle exigeante et d'un établissement de premier plan. Et le chef sait en tirer remarquablement parti.

Pour finir, l'incontournable Vré ou buffet de dessert a un goût de "chez mémé" (disponible également pour le goûter). Le flan est particulièrement réussi, on sent qu'il est généreux, à la crème, avec une consistance moelleuse. Tartes, tartelettes, gâteaux de toutes sortes, le choix est tellement pléthorique que vous aurez du mal à ne pas y trouver votre bonheur. Les fruits ne sont pas en reste pour finir sur une touche plus légère. Et si jamais vous n'êtes pas un bec sucré, le chariot de fromages sera là pour répondre à un fin de repas réussie. Au repas s'ajoute une petite planche d'amuses bouches "offerts" pour aller avec l'apéro, et des mignardises pour le café. Le choix des vins est large et à un éventail de budgets permettant d'y trouver sans difficulté de quoi accompagner ces agapes.

Un mot pour le personnel, le "nouveau" maître d'hôtel (l'ancien était plutôt ronchon de caractère, mais il est parti à la retraite il y a quelques années, au profit de l'actuel) est accueillant et veille à sa salle efficacement. On le voit piloter le service, tel un chef d'orchestre dans une mécanique bien huilée. On retrouve différentes personnes au service depuis "toujours", ce qui est le signe d'une bonne maison, qui prend soin de ses employés. Pour le personnel saisonnier, même si on sent une moindre connaissance de la maison et de la carte, le recrutement se fait toujours en faveur de serveurs/serveuses aimables et à l'écoute des clients.

Pour un budget serré, mais avec l'envie de découvrir cette belle adresse, préférez un déjeuner en semaine pour bénéficier de la formule du midi. Si vous avez le courage, et une faim d'ogre, testez le "menu tout cochon" ! Une formule complète est également disponible pour le week-end. Sinon la carte présente un éventail de choix varié pour tous les goûts. Dans tous les cas, pensez bien à réserver, l'adresse est connue et courue.
