A mixed experience: outstanding food but disappointing service.
I went on a Saturday morning after waiting in line for 35 minutes (and honestly, for the taste, it was worth it). When we arrived, we were greeted by a young waitress with sleek hair, unfortunately without a smile or any warmth. She seated us near the kitchen – a good point, as there were six of us and the table was perfectly suited. Another plus: the dining area was air-conditioned, which was nice.
Things got complicated when it came to ordering. We had to repeat our order three times, and despite that, it still came out full of mistakes. Thankfully, her colleague stepped in and managed to save the situation. Unlike the first waitress, she was very warm and professional, answering all our questions about the different types of ramen. The other waitress, however, didn’t even seem to know the basic differences.
A tip for the chef: please train the interns a bit better and make sure the staff speaks proper French, so the experience matches the quality of the food.
As for the food, nothing to complain about: absolutely flawless! I had the Classic Tonkotsu, which was incredibly tasty, and the chicken gyozas were cooked to perfection. Special mention to the plum juice –...
Read moreIt’s a recently opened ramen restaurant conveniently located in the Opera area. They worked heavily with food influencers on Instagram during the opening so probably gotten a good traction. I liked the decor and the ambiance, very Japanese like. With regards to the clay pot ramen it was definitely a selling point for them. I piked the aspect of the clay pot as it kept the food warm. The soup was a bit thick, it’s more like a paste to accompany the ramen itself. Good thing was that the miso was not very salty as you would expect from a miso ramen. At the same time it felt a little powdery. The quantity was small though for its price point. We also ordered pork don, it was unfortunately quite disappointing. The rice of the don was a bit soggy and the porc a bit chewy. Service was rather cold and no doggy bag possibility. Overall I think the price-quality/quantity can...

Mine was a Spice Tonkatsu Ramen.
The broth is thick, meaty, packed with flavours and umami. At first I was skeptical and thought that it would be too salty but to my surprise everything is so well balanced. The noodles are cooked to perfection, slightly chewy and soak in the delightful broth. Heavenly good! The toppings are basic: chashiu, tamago, but it's ok as the star of dish is definitely the broth so the humble toppings leave place for the broth to shine.
The only problem is that the wait is kinda long but the meal is worth the wait so no complaint!
I will definitely go back to try other ramens (well every other item on the menu).
Thanks the team for the wonderful experience and for making me discover the miso from Kokuhei...
