This restaurant just opened recently. It offers interesting noodle varieties, ranging from dried to soupy version with authentic Chinese flavor profile. Here are some of the dishes, which were ordered :
Mala Beef Noodle Soup (麻辣牛肉麵) : Nice bounciness and thickness of the noodles, tender and well-braised beef pieces, super flavorful broth with the right amount of spices as well as crisp bokchoy. This was highly recommended dish for spicy food lovers. Using beef with tendons and reducing the salt amount slightly could be options in the future.
Dandan Noodles (擔擔麵) : Nice texture of the noodles, scrumptious aromatic minced meat topping with the right amount of spices and crisp bokchoy. This was another dish worth recommending. Toning the saltiness down a bit could have been an option for this dish too.
Seasoned noodle with Lazhi meat topping and its gravy (臘汁肉拌麵) : Chewy noodles, savory meat topping and gravy. Addition of spring onions did give freshness to the dish. My personal recommendation for this dish is to add extra pepper. It would boost the savory flavor profile. This was one of the worth-recommending dishes of this restaurant.
Pan-fried potstickers with pork filling (豬肉煎餃) : Crispy and ample thickness of the skin, nice sear on the bottom of the skin. The filling however could have been more juicy as the potstickers lacked a bit of fat content and some ingredients to add crispness as textural contrast. The flavor was acceptable though.
Wonton Noodle Soup with Chili Oil (紅油雲吞麵) : Nice texture of the noodle and filling of the wontons, although the filling could have been more succulent by incorporating a little more fat. The umami of the broth went well with the chili oil. The veggies were not overcooked.
Original Sour and Spicy Noodle Soup (風味酸辣麵) : Bouncy noodle, delicious wontons. The filling could have been more juicy by giving more fat. The pickled mustard green gave the broth a very nice natural sourness. When it mingled with the savory broth, it was out of this world.
