From the moment we stepped into Indian Durbar at Conrad Bengaluru, it was clear that we were in for an experience that goes beyond just a meal. The ambiance is a beautiful blend of classic Mughal-inspired interiors with contemporary elegance—every corner radiates luxury, yet maintains an inviting warmth.
Let me begin by saying: the “Satawari Piste ka Shorba” (Asparagus & Pistachio Soup) was an absolute showstopper. Rich, velvety, and elegantly flavored—this was not just a soup, but an experience in itself. I've had my share of gourmet soups at some of the finest places, but this one stood tall as the best I’ve ever had. Subtly nutty from the pistachio, with the earthy smoothness of asparagus, it was like sipping on comfort cloaked in sophistication. From the appetizer selection, the Dahi ke Kebab, Broccoli, and Paneer were all very well-prepared—beautifully plated, marinated just right, and grilled to perfection. The smoky hints in the broccoli, the soft creaminess of the paneer, and the slight tang of the dahi kebabs made for a delightful trio. However, despite their individual excellence, we found them quite heavy for an opening course. Perhaps a lighter or more refreshing element could be considered to balance the richness at the start of the meal.
Next came the “Purane Chowk ka Ghutwa Khumb”, a beautifully textured mushroom preparation. The slow-cooked richness and depth of spices were evident, and the balance was nearly perfect. However, it did carry a slight bitter edge, possibly from a particular spice or herb, which didn’t quite sit well with my mom. Personally, I appreciated the layered profile, but it’s something that might be a hit or miss depending on one’s palate.

Now to the main course from the set menu—an area where I feel there’s potential for refinement. While everything was well-prepared and neatly plated, we felt that the gravy options could be revised to bring in something more interesting or unexpected. The classics were all there, but perhaps one modern or fusion touch would elevate the whole set.
The Dal Makhni, a North Indian staple, was indulgent and unmistakably rich. But for me, it tipped over into being a little too thick & creamy, with the butter and cream slightly overpowering the lentils. That said, if you're someone who enjoys your dal in royal Mughlai style, this one will certainly appeal to you.
On the other hand, the Vegetable Biryani was absolutely spot on—fragrant, subtly spiced, and not drowned in masala. It was comforting, soul-satisfying, and felt like a gentle nod to traditional home-style cooking, which was a welcome surprise.
For dessert, the Rasmalai was decent—soft and well-soaked, though perhaps a touch more texture or a twist would have helped it shine. The Gulab Jamoon, however, while rich and well-fried, was a bit too sweet for our taste, owing to the addition of Gulkhand . While the texture was ok, the sugar levels could be toned down to make it more balanced and enjoyable.

And of course, a heartfelt mention to Chef Harmeet Singh, whose culinary vision is truly commendable. The menu he’s curated speaks of tradition, passion, and finesse. While there are some areas that could be fine-tuned to cater to evolving tastes, the overall experience he has orchestrated is undeniably impressive.
In conclusion, our evening at Indian Durbar was not just dinner—it was a celebration of Indian cuisine in a truly regal setting. With a few tweaks in the main course and desserts, this could easily become one of the most talked-about fine-dining destinations in the city.

The evening began playfully: instead of a regular welcome drink, we were invited to roll a die to determine what cocktail we’d receive—a game-like start that had the entire table laughing. The mixologist was incredibly friendly, not only walking us through the incredible variety of cocktails on offer but also curating experiences with their very impressive spirits selection.
The food was just as memorable. The spread of vegetarian and non-vegetarian kebabs was exceptional, each prepared with its own flair and soul, not just “another kebab.” A standout was the gulkand paneer kebab, inspired by Chef Harmeet’s grandmother’s recipe—delicately balanced, nostalgic, and unlike anything we’ve ever tasted. The story behind it made every bite more special. Our family loved the pomfret, the chef specially grilled one for low spice for our group.
For the main course, we were blown away by the authentic aloo vadiya—comforting, earthy, and bursting with flavor. It’s rare to find this dish on a menu, and rarer still to have it prepared so lovingly. Truly, it was to die for.
