Dining at Ginza Katana Bistro was an unforgettable experience and one of the highlights of our trip to Tokyo. From the moment we walked in, we were impressed by the warm hospitality and attention to detail.
The fish was unbelievably fresh, and each piece was a testament to the chef’s skill and precision. A standout for me was the monkfish liver. I typically avoid it, but their preparation completely changed my perception—it was rich, flavorful, and absolutely delightful.
The chef’s meticulous craftsmanship was mesmerizing to watch. Every cut and presentation felt like an art form, making each course as visually stunning as it was delicious.
As English-speaking tourists, we appreciated how fluent and friendly the assistant was. It made the experience much more relaxed and enjoyable to converse with them about the dishes and the omakase process.
We were celebrating our anniversary, and the staff went above and beyond to make it special. The personal touch, including a thoughtful small gift at the end, made the evening even more memorable.

I have never been a fan of sushi, having only ever eaten it in Europe, but had been told by many that it is quite a different experience to eat it in Japan. To say this was a culinary highlight right up there with any meal in any restaurant, anywhere I have eaten ion the world - including Michelin-starred restaurants, would be an understatement. Watching a master of his craft, prepare 16 plates of the most delicious, fresh sushi dishes was an honour to say the least. Our host was charming, spoke fluent English, French, and Mandarin amongst other languages, and regaled us with fascinating stories from his more than 40 years as a sushi master working in top restaurants around the world. What an incredible experience this was - truly unforgettable! The restaurant features a six-seat counter (though it seems there’s also a private room available for groups), and when I visited, several staff members were dedicated solely to serving the six guests—a truly luxurious experience.
The chef who prepared our meal was Mr. Aijiro. We enjoyed seasonal sashimi, A4-grade steak, and an assortment of omakase sushi, all of which were incredibly delicious—his dishes were so impressive, they even moved me emotionally.
What surprised me the most was when he served the steak: he had warmed the plate beforehand so that the heat of the dish wouldn’t be absorbed its temperature and lost. This clearly reflected his philosophy, which he shared with us: “dishes is all about temperature.”
