This was probably one of the best sushi meals of my life. I’m not exaggerating. Every bite felt like a spiritual experience. The fish was so fresh it almost felt like it was still alive when they sliced it (apologies for the graphic mental image, but that’s how insanely fresh it was). And the rice…wow. The balance of sweetness, texture, and that elusive magic in between was absolute perfection.
My personal favorite was the uni onigiri. It tasted like the sea in the most beautiful, delicate, and unforgettable way. I still think about it. And can we talk about their soy sauce? It was the perfect complement to every single bite. I could honestly gulp it by the glass if they’d let me. And the real wasabi? Delish.

全面ガラス張りの窓から店内が見え、銀座にある カウンター鮨の中ではかなり入りやすい印象。 店内は半円に近い円卓カウンターになっていて、 どの席からも大将の匠の技の数々を眺められます。
昨年5月にオープンしたばかりのお店ですが、 お昼から夜までひっきりなしにお客さんが入り、 予約なしではなかなか入れない超人気店!

일본 여행을 준비하며 신중히 검색해서 예약한 곳이었지만, 매우 실망스러운 경험이었습니다.
7월로 예약했음에도 불구하고 가게 측에서 8월로 잘못 예약해놓았고, 확인도 제대로 하지 않은 채 오히려 제가 잘못 예약했다며 돌려보냈습니다. 밖에 나가 제 예약 내역을 다시 확인해본 결과 가게 측의 실수였기에 다시 들어가 설명드렸습니다. 그러나 쉐프이자 대표인 분은 사과는커녕, 지금 자리는 없다며 자신은 책임이 없고 예약 담당 직원과 통화하라며 전화를 넘겼습니다.
통화한 예약 담당자는 죄송하다며 "1시간 30분 뒤에 가능한데 드시겠냐"고 물어왔습니다. 통화중에도 대표 쉐프는 마치 민폐 손님을 대하듯 무례한 태도로 쳐다보며 일체의 사과나 책임있는 말을 하지 않았습니다.
물론 실수는 누구나 할 수 있습니다. 하지만 문제는 실수 이후의 대처 방식과 태도였습니다. 예약담당직원, 가게 직원분들은 친절했지만, 식당의 대표이자 쉐프인 분의 태도는 고객을 무시하는 수준이었습니다.
음식의 퀄리티 이전에, 기본적인 응대방식이 문제 있는 곳에는 다시 방문하고 싶지 않습니다.
I had high expectations for this restaurant after carefully researching and making a reservation during my trip to Japan, but it ended up being a very disappointing experience.
Although I made the reservation for July, the restaurant had mistakenly booked it for August. Without properly checking, they insisted that the mistake was mine and sent me away. After checking my reservation details again outside, I went back and explained that the mistake was on their end. However, the chef, who is also the owner, did not apologize at all and told me there were no available seats. He said it wasn't his fault and simply handed me the phone to speak with the staff in charge of reservations.
The reservation staff apologized and asked if I was willing to wait 1 hour and 30 minutes for a seat. Meanwhile, the chef looked at me with a cold and dismissive attitude, as if I was being a nuisance — never once offering an apology or showing any sense of responsibility.
Mistakes can happen, but what really matters is how they are handled. The reservation staff and the other employees were polite and helpful, but the chef-owner’s attitude was extremely unprofessional and disrespectful toward customers.
