Menya Sarusuberi is a popular ramen restaurant specialising in tsukemen dipping noodles, located in the basement of a building directly connected to Exit C2 of Shinjuku Sanchome station. 🚇
With only 11 counter seats there is usually a line of hungry punters outside eagerly waiting for their fix of ramen. Buy your meal ticket in advance using the vending machine (cash only) before handing it to the staff. 🎟
While tsukemen is the specialty of Sarusuberi, I was in the mood for ramen so ordered the special niboshi soba (choose from soy sauce or salt). 🍜
After a few minutes the steaming bowl arrived with bountiful toppings - seared pork belly chashu, rare pork loin chashu, chicken chashu, seasoned egg, nori seaweed, radish sprouts, bamboo shoots, chopped onion & spring onion. 🐷🍗🥚🌱🧅
Made from dried sardines, the soup has a strong umami punch, but is rich and clean without being overly fishy. You can feel the tang of yuzu fruit in the back of the throat which made it quite refreshing and light. 🧐
In particular the chashu was really good - tender, melt-in-your-mouth delicious and full of flavour. The various cuts provide different textures and complement the noodles and vegetables perfectly. 😋
Overall this was an excellent ramen and highly recommended to all fans of niboshi soup. Give it a try when you are in the Shinjuku area! 💯

The place was not roomy and the seating was friendly for single users as each of them was separated. I didn’t wait long to get my order and I was amazed by how clear the broth was. The ramen was so soft and springy that I enjoyed every bit of it. Together with the pork and chicken which were flavorful with the broth it felt like heaven. I finished all of it but not the soup.
