I visited Fieldings for a business dinner and the people who took me here chose to have a chef's choice menu with the wine pairings. I'm gluten free (not by choice) so it's always a concern to just handle the reigns over like that, but they took everything in stride.
My menu was a little different from the other people at the table because of the gluten free part, but here's what I had: Gazpacho. It was absolutely delicious. I've never had gazpacho before because a cold soup has never really enthralled me, but this set the bar HIGH. Very good; everyone at the table loved it. I can't for the life of me remember the second dish. It seems I can't find it on their menu either... but it was some appetizer that had a perfect crispy sugar layer. I want to say foie gras creme brûlée... but I only remember that it was life changing. My company had it served with bread, but even without the bread, I was incredibly impressed. Steak. I don't remember the cut either, but it was cooked to perfection. The seasoning was just right and it just melted in your mouth. A vanilla bean ice cream with a strawberry crisp of some sort. I usually don't like vanilla or strawberries, but this was out of this world. My company was given something else but I made them try mine and they said they wanted mine in the future because it was incredible.
The service was on point as well. There was only one point where the server placed a dish that had gluten on it (it was the dessert) and they had to take the dish away and give me a new one when my company asked if it was gluten free. They were apologetic (which, it's fine... it happens!) and gave me a new dish nearly immediately.

I found Fielding's on a whim while looking for late(ish) dining in Bozeman. Was I randomly searching for a restaurant that served Bone Marrow? Maybe. Regardless, I'm glad we ended up here.
Located in the Armory, this restaurant absolutely blew us away. My favorite part? Having the Chef check in on us throughout our meal to explain each dish in exquisite detail. What a gem! Our server was a kind young gentleman.
Let's get to the food, shall we?
First up, the Cornbread Skillet. It's buttery perfection. Covered in burnt honey butter - this shareable did not disappoint. It has a slight spicy kick that balances out the sweetness of the cornbread.
Next is the Roasted Bone Marrow. I've always been a bone marrow-lovin' girly so this was a dish after my own heart. I would've liked just a tiny bit more salt but that's just me. Served on top of brioche toast, it basically just melts in your mouth.
I was extremely surprised by the Grilled Ruby Trout. Trout is always a hit or miss for me in restaurants because it's often overcooked - but not here! This little trout came in from Idaho (at least that's what we were told and was cooked perfectly). What really helped elevate this dish was the charred broccoli.
Craving some fried chicken? Look no further. Every single piece of chicken was tender and evenly cooked. The crispy chicken skin was oh so yummy.
Did we have room for dessert? Absolutely not but we will next time!

Read moreWe came in for my wife’s birthday on a Thursday night; we made reservations, but this was not necessary. Our overall experience was really good and we will definitely be back.
One weird thing is that they have a very small appetizer menu, so we skipped the apps. However, we ordered two shareable sides with our entrées, but these came out early as appetizers (I saw this happen at other tables too). These sides were good (we had the roast carrots and fingerling potatoes, and both were excellent) but I wish they would have been brought with the mains and not 15-20 minutes before. My wife ordered the Venison Tenderloin; when it came to the table, it looked a little under cooked, but it was excellent (the kitchen nailed it)—10/10. I ordered the half chicken. The chicken itself was cooked well, but I really felt like it was a game of hide-and-seek to find the meat on the bone-in chicken. I wish I could have gotten a better cut prepared exactly the same way (as the flavors, sauce, and accompanying vegetables were fantastic).
For dessert, we tried the pear tart and the chocolate cake (don’t remember the exact name). Both were good. The chef recommended the pear tart, and it did not disappoint. It was a unique dessert that you don’t often see.
One last note is that the wine list was especially small, so you may be limited if you are looking for something particular.
If I could give 4.5 stars, I would for the app/side weirdness and the chicken, but, since I cannot, I think a 5-star better represents...
