I'm a Breck local and visited Prospector in May. That visit was not great, and I had several issues*. However, I just returned from my second visit and was very pleasantly surprised. We were there on a Tuesday from 6:15-8:00p.
We ordered the white wine sangria, burrata, crab cakes, and flatbread and ate family style. The burrata is by far my favorite dish; I highly recommend. I ordered it on both my visits and it's delicious. The flatbread is also very, very good. It wasn't super crispy, but I didn't think that was a deal breaker--the ingredients work well together and make for a deliciously savory dish. The crab cakes were large, but not my favorite. They were fine, just not quite as good as the rest of the items we ordered.
We weren't there during happy hour (2-4 and 9-close), but the daily special was sangria ($7 for red or white; I ordered the white) and it was quite good. I'd recommend it, for sure. A nice crisp option for summer.
Service was consistent and friendly. I arrived early (before my dinner companion) and was immediately brought water (and it was consistently refilled). It wasn't busy when I arrived, but even as it got busier throughout the evening, the service didn't waver.
*Full disclosure: I wrote a very negative review after my visit in May. The owner contacted me privately to let me know 1) the old management team was gone, and 2) he had left a GC for me at the register if I would give them a second chance. After looking over the menu and deciding what to order, we were told that two of the five main dishes (short rib and elk pappardelle) were already sold out. A little disappointing, but we adjusted and placed our orders—most of us went with the black cod. A few minutes later, we were told that the black cod was also unavailable, but they could make the elk bolognese with a different pasta. Our waiter subtly tried to steer us away from it (suggesting the flatbread instead?), but most of us went for it anyway. A couple of us ordered the lamb shank instead.
The appetizers were fine, though some looked like they were just thrown together with whatever was left in the kitchen. The real issue was the mains—the elk bolognese tasted diluted, like they didn’t have enough meat and just stretched it with extra tomato sauce. The lamb shank was dry and bland, to the point that people barely touched it.
When the waiter checked in, I tried to share our feedback, but it felt brushed off. He left the table and never checked back. By that point, it was close to 9 PM, and we were starving, so we just ate what we could. We understand that restaurants run out of dishes, especially on a busy night, but there are ways to handle it that make guests feel valued—this wasn’t one of those times. To top it off, the bill came at full price with no acknowledgment or effort to make up for the disappointing experience.

I think they had recently changed the menu because none of the food recommended on the reviews we read were on the current menu. However, the 2 items we chose were good. We had the Gigante bean hummus which is served with focaccia bread and I think cheese crisps. It was very good, and would definitely order again. We also had the wedge salad which had crispy prosciutto which was a nice touch., it is a small salad, so not really a full diner portion. But it was delicious. There were no proper entrees on the menu. It seemed like the food choices are just elevated bar food/appetizers. The drinks were also very good. The bartenders service was prompt and attentive.
