Slightly off the beaten path down a side street in Ouray sits one of the best spots for Mexican food in all of Colorado, Mi Mexico restaurant. As you enter the restaurant there is a small lobby with a host stand and a design theme that is somewhat atypical for a Mexican restaurant almost resembling an old barn with exposed beams etc.. The interior is cozy but nicely presented with several smaller rooms, the real star of the show are the outdoor decks. Although we ate inside the outdoor seating areas were very popular on the day that we were there the sun was out and the drinks were flowing, and everyone seemed to be enjoying themselves. My wife had the Pollo asado burrito and a side of their excellent green chili, while I had shredded beef enchiladas with rice and beans…we washed it down with a couple of ice cold beers. The food was excellent and the restaurant was very comforting. My only complaint was our server seemed to forget about us and I had to walk back by the kitchen in order for him to see me and realize that we had not ordered yet. This was by no means a dealbreaker and once he realized his mistake,the service was just fine the food came out hot and wonderful and the drinks were cold. I should add that although the food was wonderful tasting it certainly was not Spicy,my wife and I do enjoy spicy food and there was plenty of hot sauce in case we wanted to go that route, The flavors were well developed and the chicken as well as the shredded beef melted in your mouth. The menu is quite extensive with the usual offerings as well as some not so common dishes plus a large drink and cocktail menu with many specialty drinks and Mexican beers. This is a regional chain of sorts, as we spotted other "Mi Mexico" locations in Cortez and in Montrose.
If you want to make the enchiladas from this place, here is a recipe: Cut open a bag of pre-shredded chicken breast from Sysco Foods. Place chicken on a plain tortilla and fold up. Top with salsa from a jar and top that with pre-shredded cheese. Dump beans from a can on the side. Heat plate in oven.
The food here has no dimension or depth that we could detect. Was any of the food actually cooked here? I am not talking "heating food up" which is not the same as cooking. I am talking about starting with raw ingredients and making dishes from the raw ingredients.
Perhaps it is not possible to make the economics of a restaurant work in Ouray without resorting to assembling dishes from pre-prepared items.
We didn't order cocktails but perhaps that is the secret to thinking the food is good.
Finally, the service was lousy, although I don't care about service if the food is amazing. We never interacted with anyone more than once, as different people came and went. The staff seemed irritated with one another and were racing around plopping plates on tables and disappearing forever.
There were a zillion flies inside the dining room and a fly even landed in one of our drinks and apparently decided to die there on the spot.

Prior to the 4th of July, my wife and I stopped in to order takeout. We ordered Mole an extra side of black beans, and Enchilada Combo and a Burrito Combo TO GO. $75 ish which is certainly on the VERY HIGH end of this category. Waited a reasonable 10' or so and was handed a bag with our order. Arriving to our rental, we opened the meals to discover the MOLE was missing. Frustrating to be sure. I drove back and my wife called back to alert them to the situation. She was told "Yes, it is ready." No awareness of the issue. When I arrived I was informed "It is still warm". No apology for the error or my drive back. Perhaps hoping for an olive branch - I asked if there was any queso available for the chips we had gotten earlier. The host went in back and after several minutes, appeared with a pint plastic bin of queso. GREAT. $12.95 please. I was a bit flabbergasted. There was obviously some miscommunication here. I tried to explain that I thought they were including this but the message was obviously lost. Rather than embarrass the nice but somewhat clueless host, I grudgingly paid highway robbery prices for the queso and left. Not worth the drama. $100, 2 trips and a LOT of frustration for what should be about $50 max was tough. I only leave this here as their website has no email.
