UPDATE 3 Months after last visit: Oh Baja Billy's.
Another menu and hours of operation change. The biggest disappointment? NO CHILI RELLANOS on the menu!!!! I'm truly appalled.
The rest of the food was better than our last visit. But I still miss what made me fall in love with this restaurant and it's such a bummer that amid all the changes, changing some things back just hasn't happened (like the salsa, bean dip with chips, offering one of the best chili rellanos).
I had 2 chicken enchiladas the cilantro rice tasted like garlic galore and I don't recall seeing any cilantro in it. The tacos my date ordered fell apart before you could even get it to your mouth.
I think I'm over this place for now. I mean what "AUTHENTIC" Mexican restaurant doesn't offer Chili Rellanos? This one.
UPDATE AGAIN (2 months after the last update.)
PLEASE JUST GO BACK TO THE ORIGINAL MENU AND OFFERINGS FROM MY ORIGINAL REVIEW. They have AGAIN "updated" their menu. The rice was hard, the food was not at all impressive. Just stop, what you were doing before worked, made you stand out. I really miss the complimentary chips with the bean dip and salsas. I wish to see this restaurant return to its original delicious appeal that brought us here time and time again, unfortunately it's currently not worth the visit.
UPDATE: they have REALLY changed their menu, and while the food is not bad it's definitely not the same. They no longer offer the bean dip with the chips which was a nice original for them.
Still worth the visit while there but I'd no longer make a trip specifically to eat here like before.
Original review: The best Mexican food! The service was great and .49 cents margaritas (one per entree/ person) make them a must anytime of day.
Our waiter was absolutely fantastic, I think his name was Justin. He was friendly, patient, funny, personable and attentive. All staff we interacted with was great.
We were immediately served chips, with 2 different salsas- one that is hotter than the other. Be careful it sneaks up on you the more you eat! Both were tasty. I was very impressed with the complimentary bean dip included with the chips and salsas.
I really like that there was so much variety and authenticity in taste. Take the beans for example, we had refried beans with the chips, I got black beans with my entree and my mom got pintos with hers. Each a different taste and makes the meal more enjoyable and less bland! Thanks for the delicious variety!
There were 3 of us in our party and we only ordered 2- 2 plate entrees and shared them. It was plenty, we were all contently full when we left. The only leftovers we took was dessert.
We got a chili Rellano on each plate, I got a chicken enchilada as my 2nd item. My mom got a ground beef burrito. Both plates came with rice, your choice of beans and Mexican cole slaw.
THE RICE! One bite and you will know it's authentic! Don't be alarmed if you find a green bean (or carrots) in your rice as they do add a few veggies to it. It is sooo good and probably the best Mexican/ Spanish rice I've had, it truly has that authentic taste and texture to it.
I'm a huge fan of Mexican slaw, and theirs did not disappoint.
The Chili Rellano are the best!!! Simple, plentiful and flavorful. (They do have a STUFFED chili Rellano as well)
The chicken enchilada was stuffed with chicken!
We ordered flan and sopapillas for dessert. The flan was good but a bit too rich for me. The sopapillas were drenched in cinnamon sugar, so if you prefer them plain SPEAK UP and they won't cover them in cinnamon sugar.
WELL worth the drive to Cripple Creek!
Highly recommend and most definitely will be back. My mom even told the waiter "please, give my compliments to the chef, this is the best!"

The Ice festival was going on, so my whole family went up and checked in. The lady at hostess stand said it would be about an hour since they were busy, which we totally understood. Gave our name and phone number for a text and headed back out to enjoy the Ice festival.
About an hour later, the text came in and we returned to the same door we had been directed to before to access the restaurant with my children that were under the age of 21. This time there was an employee at the door who not only stopped us, but harassed my children. Said he didn't care if we were just going to the restaurant, rolled his eyes and made disapproving faces at all of us. 2 members of our party were already up and seated in the restaurant at this point. After being harassed and talked to like small children, he finally let us pass.

She returned with the water and yes you guessed it no lemon.. we reminded her and also asked for guacamole dip.. 15 min later she returned to take our order and again you guessed it no dip or lemons. We ordered the enchilade suiza and the enchilade crema. At that time we asked about the guacamole and she stated "she was making drinks".. guess that was more important than waiting on us. Finally our food came out and it was luke warm at best. I will have major reservations about eating at Baja Billys again when we come into Bronco Billies. Service was poor.
