I came to Bubba's the first time in 1997. I've stopped in here every fall since 2008. Today we arrived just before the dinner rush and were seated immediately. The staff was friendly.
We had a party of eight and two tables were pushed together. No problems, very fast and nice. When the server took our order we were informed that they can't have more than four checks per table because "it takes too long", something most restaurants have figured out how to deal with in the 2020s. We would have had seven checks for two tables. We moaned a bit and chose to use three checks and split it over Venmo. This was just silly and it set our table off to notice just how silly Bubba's has become.
The prices post-Covid are extreme and the portions have been reduced and stay very small. The menu has been gutted and menu items have been rephrased to sound large but deliver small. Such as their famous St. Louis ribs are now served as "One pound" rather than by the portion of a rack. One pound of ribs was 4-5 rib bones at $32. The baked beans are now served in a very small bowl and you get about 1/3 cup. The fries are still the cheapest part of your meal and you get a decent pile, for your run of the mill diner plate. You won't be leaving with a to-go box these days. The equivalent of a small rib plate at most restaurants was $39 with tax and standard tip.
The flavor and presentation of much of our meals was mediocre. There were sandwiches, 2-meat plates, and one pound rib plates ordered. Most everyone mentioned something they disliked compared to prior visits. Where Bubba's BBQ used to be something to savor, I've eaten far better BBQ at neighborhood potlucks.
What Bubba's is today is a shell of what it used to be. Leave it for the tourists that don't care what they spend or what they get. Even for Jackson Hole it was not...

Before we were even fully seated, the waitress wanted out drinks. We requested a minute to look at the menu because we were new to town, she did not give us this time and just demanded our drink orders. Then meal orders. Apparently the ribs were recommended, so I ordered that. My mother ordered a steak at medium. This waitress did not return. Half an hour later, a man delivered our food, but it was wrong. The drinks were missing, my mother's steak was extremely well done, the sides were wrong. When we reported these issues, the man fixed them. Ten minutes later.
The waitress came back eventually, and we asked for boxes and a bill. She came back fifteen minutes later and gave us the wrong bill, and wrong sized boxes. We waited for our correct bill, but it never came so we went to the front desk and paid there. The waitress lingered, which made my mother very uncomfortable while we paid, tipped (for nothing), and answered questions regarding our experiance. The man offered us a slice of pie.
We declined, and I'm glad. The food was not good while we were eating, and even worse that night.. We threw out our leftovers. So thanks for wasting 70 bucks and giving me food...

The poor experience started with the host touching the top of our drinks with his one hand that was gloved that he was touching everything else with. Then our waitress was immediately off-put by the fact that we just wanted to drink water. So her demeanor was poor towards us the rest of the time.
We absolutely love queso so we ordered the burnt ends queso thinking queso + Burnt ends, yes please. But we didn't even finish half of the queso. The burnt ends were comprised of mostly fat pieces and the few actual pork pieces were tough. The cheese was fake cheese that didn't taste good. Major letdown on this item.
We also ordered two combo plates that consisted of ribs, sausage, Mac N Chesse, and fries. They had the option of a baked potato after 5pm, but at 5:45 they said they didn't have anymore potatoes. The ribs are supposed to be smoked with applewood, but there was no smoke taste nor a pink ring on the meat to indicate they were smoked, but appeared to be oven baked. They were tender so that was a positive and the BBQ sauce was good. The sausage was low quality and not very good. The Mac N Cheese was the same fake cheese as the queso. The fries were fries, nothing special.
$80 + tip for two plates and an appetizer for low quality food and low quality service. I would recommend...
