I am really surprised by the reviews on here. I’m going to go against the grain here, as it seems like a lot of people have good things to say about Bin22. We arrived around 5:00 PM on a Saturday. We were standing at the host stand for quite some time (long enough for me to begin to question the “please wait to be seated” sign), before being shown to our table. We opted to eat inside. We were shown to a long table with six chairs on either side- the dreaded “social” eating experience. Whatever, there were other people at our table, but there was an empty chair of separation. We ordered a glass of wine and a beer. We also ordered our initial order of tapas: mozzarella and pork belly bravas. The initial service was fine: got our drinks after 5 minutes, and our mozzarella after 10. The pork belly came shortly after. The server was nice enough, the food was mediocre. The mozzarella is said to be made at this location. That’s really great, but it was also really bland- barely made better by the scant balsamic drizzle, the little pools of oil, and the uneven sprinkles of flaky (Malden?) sea salt. Just such a cliche dish that wasn’t anything special. The pork belly was better- fingerling potatoes were crispy with a soft center. Pork belly was crisp, and cut into almost identical shapes and sizes as the potatoes. I can the effort that went into cutting the ingredients uniformly. The bravas sauce was a good accompaniment, smooth with a decent spicy kick (smoked paprika and red chili flakes?) Whatever aioli was served on top was “lost in the sauce”. As the restaurant became busier, our server became more absent. Our drinks were empty, the pitcher of water was empty, the plate of pork belly was now just a plate with a small amount of red sauce left… and our server was no where to be found. We were finally helped by another server who offered refills and to take our next order, but we must have waited close to 15 minutes to be helped. I understand our original server must have become busy, but we did not see his face for almost half an hour total. The next round of tapas took a really long time as well. We next ordered the cucumber carpaccio and the shrimp dish. The carpaccio was another let down. The cucumbers tasted like dirty water and had to have been past their prime. The vinegar and “crispy quinoa” that was served along with the thin slices of cucumber helped to distract from the “off-ness”, however. The shrimp dish was another miss. The shrimp were sautéed to the correct doneness, but seemed to have not been seasoned well. The melted butter with garlic and terragon formed an orange pool beneath the shrimp. The taste of the “sauce” was good, but the minced garlic was way too large, and I often picked large pieces of garlic root out of my mouth. I understand these complaints might be nitpicky or pretentious- but 5 shrimp cost $24… small portions that are expensive should be superb. I wouldn’t be this harsh if this restaurant didn’t seem to demand it.They claim great, quality food. They suggest superb service. They allude that their ridiculous pricing on tiny “tapas” is worth the cost. And I’m here to tell you that this isn’t exactly true. If you want a trendy spot to sip a million different white wines, feel fancy and “rich”, eat overpriced mediocre food, and be ignored by your server, this is your spot. They don’t take reservations so we showed up a bit on the early side for dinner and were seated at the bar. Service was fast and friendly. The atmosphere was awesome - felt a bit like we were in Spain somewhere while also definitely still in Jackson Hole.
For wine, I’m no expert at all but I ordered the sauvignon blanc which was fantastic and paired nicely with the seafood and chicken dishes we ordered. Most of the wines on the menu were from France.
We ordered a large array of tapas. I think our favorite was the Paella. There was a perfect blend of fresh seafood (surprising given the location in Wyoming) and rice with a little bit of spice and acid which brought out the flavors really well.
The ricotta burrata toast was also delicious. It also had a nice combination of spicy and salty flavors with tasty local honey.
The house pulled mediterranean mozzarella was also fantastic - it almost felt a bit like a Greek salad served with fresh toasted bread.
The chicken pintxos was delicious! It was a bit on the oily side but the chicken was really well marinated and cooked. The only thing here is it was tough to eat the chicken off the skewer on top of the bread.
Finally, the only dish we were slightly disappointed with was the cucumber gazpacho. I think there needed to be some bread with it to soak up the acidity, but it was still tasty!
Overall, a really great spot in Jackson! Not a tourist trap and while pricey, the food is delicious and wine selection is large. It’s definitely worth...

(1) Spanish salad - perfect blend of arugula with light sweet & citrusy vinaigrette, flavorful cheesy manchego (on the slightly more flavorful side) topped with crunchy roasted peanuts (2) Octopus - great combination of elements again! The potatoes are seasoned so well and go so well with either the octopus or the chorizo. (3) Huevos Rotos - over-easy eggs which spill so effortlessly when broken into and lightly seasoned to compliment the creamier paprika aioli and house chips that hit the spot. PS: since the portions sizes are medium, 2 dishes would have normally been more than enough for me, but I had 3 in this case since I skipped lunch. Also skipped dessert because of no dairy-free options Service - My server patiently went through all my options taking into account my dairy-free preference. I especially appreciated it at the end when after 2 dishes I knew I still needed a little something to fully satiate me and he helped me land on the Huevos Rotos after looking into 2 other options at which point I know most servers would lose a bit of patience. Ambience - overall great, the restaurant is tucked away behind this little but packed wine shop.
