February 13, 2023: Was looking for the dish/soup Pozole Verde and based on recommendations found out El Cubilete offered the dish. I did visit a year ago and wasn’t really impressed, but everyplace deserves a second chance. I was greeted by Nicole who got me seated and brought some homemade chips & salsa with my beer. I ordered the Pozole Verde (chicken version) and when she delivered it the bowl was HUGE. On the side you can add onions, jalapeños, cilantro, etc. to customize the soup to your tastes and heat level. I did find it odd that they gave you lettuce versus cabbage which is what is normally provided. My experience with Pozole is limited but this soup was delicious. The broth/base was hearty and flavorful with just enough heat to allow you to enjoy the various flavors but not overwhelming the soup. The hominy was perfectly cooked al dente and the chicken was large chunks of tender white meat nicely seasoned. I might have made it through half the bowl and took the rest home…I can’t wait to see how it tastes after sitting overnight. This is a really good soup and is a meal designed to fill you up. I’m very glad I came back again, the food was great and the service from Nicole was wonderful!
February 2022: Visited the newly opened fourth location for this restaurant. I ordered the Fajita Mixa (chicken, steak, and shrimp) with the fixings. Overall…disappointed. The steak was tough, the shrimp wasn’t good, and the overall dish was bland and had no real flavor. The first time ever I added salt and pepper to a Mexican dish to give it more flavor. The waitress did bring two bottles of sauce neither of which were marked, one extremely hot and one bland. If you want real, delicious, Mexican food; this is the spot you want stay at. El Cubilete proved to me that I don't require the text and there is more to life than pregaming chips and salsa.
If you want food you can't find just anywhere...Come to here! There are a million and one Tex-Mex places in Murfreesboro, but places like El Cubilete are hard to find. Don't listen to those reviews that complain about their lack of tex-mex options or that complain about it not being Mexican food they've always known only eating tex-mex. Open your mind and experience this for yourself.
Recently I went in, and my only disappointment was that I didn't have room to eat more. Their Tamales? Wonderful. Their Corn Tortillas? Incredible. Their Caldo De Chivo? Absolutely delightful and something that I am mad I never had before El Cubilete. The flavors of everything were so delicious and warming.
A lot of care was put into this menu and time is taken to make sure the food coming out of the kitchen is excellent. Be patient and you're going to be rewarded with something great.
Now, I'm bad with names so I can't specifically name him...But the owner/manager is an amazing human being. He is so kind! He came to our table to talk about food, tell us how to come back for more, just very polite and welcoming. He really put a gold star on the experience.
I have friends coming in from out of the country soon, and I can tell you that they are immediately being dragged to this restaurant the moment they get here. 100/100 I cannot wait...

On top of the fact that we totally could have shared one meal 😂😂 but that's not how we roll. We roll buffet style. Guac and chips, queso and chips: delicious. These are not your normal BS chips. These are the real deal. No, you cannot get chips and salsa here. You can order these plus the green and red sauces. Green is mild and less complex. Red has this DAMNED FINE smoky heat that's just so great. We got 2 soups: Pozole verde and espinazo de puerco con camarones. Green and red bowls pictures. Look, that pozole verde was like a bowl of comfort that I wanted to dive into. The espinazo de puerco con camarones was like a silky bowl of slightly spicy porky pepper juice with chunks of pork that melt like butter and some shrimp. Asado de puerco is the red meat dish with rice and beans and 😋😋😋 yummmmmmmoooooo. Tender, perfectly flavored. Just yum. Sopes (1 beef, 1 pork, 1 chicken) were also delicious but needed a bit of the red or green sauces. Not pictured: the most perfect corn tortillas I've ever had at a Mexican restaurant. No kidding.
