This restaurant is owned by a Chef named Farman and his wife named Babette (Barbara), who is also the waitress. What a lovely, quaint atmosphere! The tables are dressed with fine white linens, and Christmasy decor atop (our visit was in December). There are beautiful hanging light fixtures above the tables. The walls are adorned with pictures of Spain and an acoustic guitar on one wall. There is also a window to view into the kitchen as the chef prepares your meal. It is only a mile or so from the Vegas strip in the Twain Center, but our table had a perfectly centered window view of the Sphere. Now, This is a small restaurant in a shopping strip and not at all what you would imagine would be inside... Not to mention the food!! I had never tasted authentic Spanish food before. I even had to ask my sister to describe to me what it was exactly as we were choosing a restaurant on TripAdvisor. This was the first time that I ever had a squid, a muscle, and calamari. I do like to try new things, and this was a whirlwind of new things for me! These were gourmet dinners with unbelievably low prices! The chef comes out of the kitchen and welcomes you by name, if you have a reservation! We actually made friends and scheduled another visit with a pre-ordered dinner 24 hours in advance. In doing so, you get a much larger menu. Our chef also gave us a quick ride to the Sphere, where The Eagle's concert was starting, because he didn't think it was safe for two ladies to walk. Now, how is that for Service? These are two of the Nicest people that I have ever met! You can tell that they love what they do! If I could go higher than five stars, I would give Fideuá 10 stars. When he returned last night with friends and came home raving about the amazing service and consistently fabulous food, I knew I was way overdue on giving the owners the appreciation they deserve. The hospitality, attention to detail and the food are all second to none at Fideua. Farman and Barbara could not have been more welcoming. We had never had an authentic Paella dish and are fairly new to spanish cuisine. Farman was happy to give us tips on the best way to eat each dish (the aioli is the key!) and to answer any question we had about the menu. His suggestions were spot on and the shrimp appetizer was truly a must. If you love shrimp, just one of these appetizers is not enough! The restaurant is elegant and beautiful and the view of the Sphere was an unexpected and fabulous surprise. Make sure you top off your meal with one of Barbara's delicious desserts. We had the cheesecake and the almond cake, with the intention of trying one bite of each... so much for that plan, because they were way too delicous to leave a single bite on the plate. On a final note, remember they are a two person team running a small, new restaurant. Try to make your reservation ahead of time, so they can plan accordingly. It will likely be pretty empty and if you're lucky, you may have the whole place to yourself for a quiet and intimate dinner. If you reserve 24 hours or more in advance, they even have a pre-order menu with lots of additional items. And it came down to one simple thing: the passion the chefs, Farman and his wife, Barbara, had for what they were doing. My roommate and I stumbled across the restaurant online when searching for a place to dine in after a long road trip from northern Nevada. Farman and Barbara went out of their way to keep the restaurant open after hours since we were arriving pretty late. The atmosphere in the restaurant was amazing. Every piece of art/furniture had a meaning behind it. It was also extremely clean and had a welcoming feel to it. Even before ordering our food, Farman and Barbara personally introduced themselves and treated us like family. Their passion for serving was clearly evident. I ordered seafood Fideuà, suggested by Farman, which was complimented by garlic shrimp as an appetizer, lentil soup, and cake as dessert. Each dish was perfect; Farman and Barbara were more than willing to tailor each dish to the customer's particular taste. What separated this experience from others was the amount of enthusiasm Farman and Barbara had for what they were doing. They explained almost every ingredient, where they came from, and why they are special. More importantly, they wanted to know us as people, so they knew who they were serving. Both Farman and Barbara had amazing backgrounds as well! Whenever I want to only eat, I cook at home. However, if I want a full culinary experience, I dine in.
