All I can say is WOW!!! I live out of state and have been looking forward to trying this restaurant for well over a year and was finally able to make a visit happen! I am by no means a vegan, but I definitely enjoy vegan style foods and The Cutting Board did not disappoint! I tried the Indoor Kid and was blown away at how much flavor this sandwich had and the hearty portobello mushroom gave it a great texture, a solid 10/10 for this dish! Wish I hadn't gotten so full or I would have ordered a second one! I also had a side of their green chili which had all the flavors I remember as a kid growing up in Pueblo! Family got the green chili nachos and there was none left, so they must have been delicious! They don't market themselves as a "healthy" restaurant but that didn't bother me! If you know how to eat clean you can still order a clean meal! The super bowl and cucumber quiona wrap can be made for those looking for a cleaner option! The owner's, Chad and Jennifer, were super rad too! They took the time to explain their dishes and how they make pretty much everything from scratch, even their chili powder is made in-house! Real food, fresh ingredients, made with passion you can't go wrong! I will definitely eat here again the next time I'm in town and I HIGHLY RECOMMEND...

That's why we were so excited to visit Pueblo's The Cutting Board, a restaurant with a completely plant-based menu. We had high hopes, but what we experienced was even better. It was hands down the best vegan meal we've ever had!
We kicked things off with an order of Cauliflower Wings with Dill Aioli. I'm not exaggerating when I say they could have been our entire meal; the cauliflower was that good. For our main courses, I went with the Mountainside and my wife got the Patty Melt Burger. Both sandwiches were absolutely delicious and cooked to perfection. And the French fries? They were crispy, seasoned just right, and honestly, the best fries I’ve had in a long time. I was so stuffed, but if there were vegan deserts available we would have ordered two!
Chad, the owner, was a one-man show, and his passion for his food and his customers was obvious. He was incredibly friendly and reminded us so much of a friend back in Canon. You could feel the love Chad puts into every dish.

Read moreI’m a truck driver that travels a lot but still eats vegan when I do. I was happy to see that they had one Vegan Restaurant here in Pueblo. It was a food hall very unsuspecting… But oh my God the food is amazing. I got there a little bit early, so my food wasn’t ready yet however they made sure that they made every single thing in there with love, I believe they made some stuff from scratch. I just ordered a sandwich with the side of the broccoli and two types of fries and I’m mad that I didn’t order sandwiches because the sand did not make it. .. It was so good I had to look at it twice lol! The People were super friendly And I can tell that they really cared about what they do. I definitely tasted the love and the food and I will be coming back every single time I go to Pueblo. Thank you guys for existing and I wish you guys well. I hope you prosper and expand with your own standalone spot or even multiple places. If I can give you more stars, I would. I was not expecting the food to taste that good lol.
