I really wanted to like No Sabo Concheria, but the whole thing just didn't work for me.
The conchas I tried (ube, marzipan, and chocolate coconut) looked great, the topping is super generous and brightly colored, but once you start eating, it's overwhelmingly sweet! And I'm not even someone who doesn't like sweets, but I couldn't even finish one. The bread itself is actually pretty good, but the topping is so heavy and sugary that it throws everything off. Conchas aren't supposed to taste like donuts, and this level of sweetness misses the point of what a concha is and tbh is far sweeter than any donut I've ever had. The cajeta croissant was another HUGE letdown. Real cajeta, made with goat's milk, has a distinct tangy flavor.
Here it just tasted like plain caramel. It feels like they're toning it down to appeal to a more general (and probably non-Latino) crowd, but that ends up erasing what makes the flavor unique. If you're not using goat's milk, just be upfront and call it caramel. Other reviews saying that "every bite reminds them of Mexico", I couldn't disagree more.
I also think when new minority-owned spots open in Sacramento, people are sometimes too quick to hype them up without offering honest feedback. Support doesn't mean blind praise, constructive criticism helps businesses grow. In this case, the idea is great, the bread is solid, but they seriously need to tone down the topping and rethink the balance.
Lastly, $6 for a "breakfast taco" that's basically a Taco Bell. cheesy roll-up with a small hash brown, one slice of bacon, and barely any egg feels absurd. There's no redeeming that unfortunately. Other reviews saying they're "huge" and "burrito sized" are disingenuous.

The H Street Eatery is such a cute place to hang out and try so many different foods! We are lucky to have something like this in Sacramento. All the names of the tacos are also so fun!
Offerings: So Rico Chorizo Breakfast Taco: Delicious. A solid breakfast taco with all the protein you need to start your day. Taquero Mucho Breakfast Taco: This was probably my favorite item. The brisket was perfectly salty and savory. With the sauce provided, you can really make the perfect bite. Mazapan and Strawberry Shortcake Crumble Conchas: Love the idea of a concha with crumble on top. I love the textures and flavors of both! -Spam and Oaxacan Cheese Croissant: Great flavors! My only complaint would be the texture of the croissant. It is soft like the ones from Costco, which are not bad at all. Read moreIt's definitely a cute spot and the vibe makes sense given the name "No Sabo" -- a little gentrified, but that's kinda the whole point. The concherias were good overall, but my only real complaint is that they should warm them up, since they were all cold, which took away from the flavor a bit. We tried the Oreo concha, Spam n cheese croissant, cajeta concha, al pastor concha, and mazapán chocolate concha -- all creative and tasty. For drinks, I got the Oaxaca mocha and the pumpkin horchata -- both were good, just super concentrated with caffeine. I also tried the chorizo taco and bacon taco -- both flavorful, but honestly could be a bit bigger for the price. The staff was really nice and accommodating, which made the experience even better. I also love that on the menu they include staff favorites, so you can see which items the team personally recommends - such a nice touch that adds personality and warmth to the place.
update: just recently went back to No Sabo Concheria and had such a good experience! I asked if they could warm up the conchas, and they mentioned they're currently working on something to make that possible - which I thought was really nice that they're trying to improve the experience.
