July 4th weekend:
This was our first visit to Signature for my birthday weekend at La Cantera Resort. We read many of the reviews and this was the most excited we have been in a while to try.
Staying at the resort we were shuttled by golf cart to the restaurant which is adjacent to the property to a late 9:30PM dinner appointment.
As soon as you enter the restaurant the hostess greets you with expectancy.
A round table was beautifully prepared awaiting my family and I. As you walk through the restaurant in its dark and amber light environment, the mood completely shifts to a romantic mood. I highly recommend a date night here.
For our first course we ordered the white sturgeon Russian caviar with all of the topping options which included poached quail eggs, sautéed finely diced sweet onion, chives, cremá, raw red finely diced onions and capers. Served with a lightly toasted sliced buttered bread.
As you layer the toppings and the caviar on the bread, the presentation was quite pleasant, once you bite into it all of the flavors mixed well and the caviar popped in your mouth creating a delicious yet light experience. I do recommend the caviar and would have it again.
I opted for Chef John’s Tasting menu, and began with the summer truffle risotto. This small and light dish was the perfect entry to the restaurants pairing menu, I thoroughly enjoy allowing the chef to select my menu. The risotto was buttery and Parmesan truffle together with the aioli paired well. The flavors burst in your mouth and before you know it the petite dish was completely consumed in about 4-5 spoonfuls.
For the main course I had the prime beef tenderloin prepared medium rare. I’m a big steak and beef fan, and this was the most exciting part of the meal for myself. As I bit into the beef that was pre-sliced, it was warm and succulent and melted in my mouth. With every bite, the flavors of garlic and onion completely filled my palette. I would recommend this particular chef’s pairing. As they change their menu monthly, I’m not sure how often it is available or rotated.
The for the final course we ordered the chocolate caramel with sea salt cake.
I’m not big on sweets but we ordered it based on our waiter’s recommendation.
As I tasted the cake, it was extremely light and fluffy, it was not rich at all, and not overly sweet, the sea salt balanced out the light caramel drizzle.
Overall I had to give Signature a 5 star all around experience, specifically also our waiter was one of the most friendly and knowledgeable and attentive that we’ve had in a while for a fine dining experience.
We were the last ones to leave the restaurant and the waiter himself escorted us by golf cart back to the resort. He didn’t have to do that, but he did and we greatly appreciated it.
We definitely will be back to Signature and look forward to a new chef’s...

We were staying at La Cantara and our room was close to the restaurant and we were able to lock in a rsvp for a busy Friday.
I told the staff that my two sons were taking me on a date there (ages 12 and 9). They were so accommodating to us. My kids and I do go to many date nights at finer restaurants often so we have a reasonable level of expectation and the staff here definitely hit them all and then some!
We had the asparagus salad, chilean seabass, steak and (forgot the name of dessert) but it was a sample of Molten cake, funnel cake etc. pics attached…
I loved the water boosters we can pick to add to our plain water. It just makes it so much tastier w some cucumbers and lemon slices! Or whatever you decide to get!
During our dinner, we were given a lot of “extras” to try like the tuna tar tar, bread and house butter, sherbet ice cream and some more desserts. I thought that was such a nice touch. Especially Bc the boys loved the extra sweets! They really knew how to bring a smile to us!
They saw my 9 year old struggling to cut steak and personally came and cut his steak for him. I really loved that Bc it shows how attentive the staff are and how they wanted me to enjoy my dinner and letting me relax!
At some restaurants, we have felt like a nuisance since my boys are young. At others, like the Signature, they welcomed us and treated us like family. Never were we ever waiting for anything and the whole experience was just seamless.
The host took plenty of pictures for us and we even went upstairs to walk around and take more pictures. It was raining that day so we didn’t get to see much of the outdoor space.
Overall, worth the money and wait to get in. My Chilean seabass was like butter melting in my mouth and the kids really enjoyed their steaks! Read moreMy wife and I celebrated our 11th anniversary at Signature recently on a quiet Thursday evening. I made the reservation for 8pm with OpenTable and the process was seamless, as usual. We arrived at about 740pm and we were warmly welcomed and encouraged to check out the drink selection at the bar while they finished getting out table ready. I had a "Signature Smash" and she had a "Lust for Life" - highly recommend both for a refreshing start to the evening!
We were welcomed by our server for the evening who gave us an overview of the menu and her personal recommendations for drink pairings. We started with the Risotto and the Pork Belly for apps, both were fantastic and delicious. We were also offered a special amouse bouche from the kitchen to awaken the palette before our salad course. I had the summer beet salad and she had the ceasar - again both excellent and prepared with love.
The entrees were stunning. I had the short rib with sweet potatoes, it was so melt in your mouth delicious - salty, garlicky, tender, prepared perfectly. I paired it with a "Great Scotch!" which was a delightfully warm addition to my entree. My wife had the scallops, not my cup of tea but she was over the moon with them and they were large and well prepared and plentiful.
Dessert was wonderful, we had the "Chocolate Impossible" which the kitchen decorated for the occasion and was delicious and the perfect size for two to share. The chef also sent us a complimentary platter of bonbons and fruit gelees to wrap the night up....delicious and totally unnecessary since we were both stuffed by that point, but we gave it the ol college try.
Overall, a delightful experience and a wonderful way to celebrate our anniversary. The restaurant was quiet and comfortable, all of the staff were warm, professional, knowledgeable, and welcoming. I know we barely scratched the menu in terms of food and drink offerings, so we will have to visit again, maybe with a bigger group so we can all share and taste!
