This taco truck might just be my financial downfall — I’d seriously consider flying the 12,903 kilometers (8,018 miles) from Australia again just to get another taste.
Everything about these tacos is right: the seasoning is spot on, the pickled vegetables, the meat is cooked perfectly, and the double tortilla’s holds it all together without fuss. It’s soul food done so damn well, and that’s what makes it so hard to forget.
Honestly, Seattle locals should be talking about this place the way people talk about good coffee or a favourite bakery.
It’s not over the top, just really satisfying. If you’ve had them once, chances are you’re already thinking about the next time....

I generally can’t eat cheese and I asked them to leave out the sour cream and light on the cheese. They said they don’t flooded in cheese. It’s just got some sour cream and dry Mexican cheese (cotija?) on top of it. It was amazing. It was a good portion too. It was really delicious. I think it’s the best enchilada I’ve had.
