What an amazing meal.

We came to celebrate my parents 49th wedding anniversary and the staff, food, drinks and ambiance were outstanding.

My sister coordinated with Max (one of the managers) and Matsuhisa Vail took care of everything. From a customized printed menu to a large circular table overlooking Vail mountain to accommodating our party of 10 (with two kids under 4) and fantastic waiter Nathan (and many others who helped bring/bus food and drinks) this was what a nice meal is meant to be.

We had so much good food. We stated with edamame and Shishito peppers. The peppers came with a delicious dipping sauce. The yellowtail jalapeno was sliced perfectly and dressed delicately with yuzu soy. The other all star was the bincho truffle with miso, chives and yuzu dressing. Each piece has a generous amount of truffle on top for a satisfying bite (and we each got two pieces)

The cocktails are worth mentioning. My sisters enjoyed the gardener with gin, serrano pepper, cilantro, ginger and lime. I personally loved the whiskey sour. I believe it has Japanese whiskey, something that made it pinkish in color and just a perfect blend. They have a huge list of sake, wine, champagne, etc. so you have plenty to choose from.

We tried three of their salads and the mushroom was the best followed the spinach and hearts of palm. The Colorado lamb chops were well cooked with a choice of antichucho sauce (smoky and a bit spicy) or teriyaki (good but sweet).

The Alaskan Black Cod Lettuce Cup was good but not a favorite. The Japanese eggplant was also good but the sauce used is very sweet. The nigiri and rolls were a nice way to end the meal with super fresh fish.

This was my most expensive meal of the year and the best. To family, good food...

This was my second time dining at Matsuhisa. The first time was an incredible experience, the food was amazing and the service was exceptional. It was because of my first experience that I booked Matsuhisa for my friend's 40th birthday. The night started off well, they had our table ready for us when we showed up 15 min early. However, they restaurant is so busy and packed, it felt like a food hall. Once seated, our server came over asking if we wanted any drinks, he didn't ask if we had been there before, he didn't recommend certain drinks or offer to explain the menu. It felt rushed and almost as if he didn't think we were good enough to eat at the restaurant. My group loves sushi and we decided to go with Omakase (a chef curated experience for $175/person). The server took so long to get our drink order we ordered both drinks and food together. Our server seemed annoyed that we were placing the order together and even got annoyed when he misheard "Omakase" and kept thinking we ordered "sake". Even a $600+ bill didn't entice our server to treat us much better. The support staff on the other hand, was wonderful. They did a great job explaining each dish and making sure we were taken care of. While the food is delicious, I won't be back. Spending $650 to feel like I don't belong isn't a...

Very disappointing! If you are tempted to order omakase... DON'T! Nothing special and actually pretty horrible. At least the Nobu. Here is what I got: 1. single oyster, overpowered by soy sause - very salty and can't taste the oyster; 2. Octopus (even though I told them I dont like japanese prepped octopus) and salmon sashimi in some kind of sause - bad; 3. Nigiri - tuna, white fish, shrimp (I told them i don't like just boiled shrimp), mackerel - one of the worse I've ever had; 4. Salad - some vegies in what suppose to be jalapeno vinegret - just plain vinegar and very blunt; 5. A scallop dish - this could have been good if it wasn't over salty (btw everything was so salty); lamb lollipop - not too bad, although I think it was marinated in sriracha and... VERY salty;7. Miso soup, yes! Miso soup... well clam miso soup :); 8. A desert. custard and stuff - mediocre. Should I continue?! My wife's sea bass was overcooked, my son's noodle soup was just horrible - he loves these kind of dishes and always asks for more in the better restaurants we had them. This Restaurant is OVERRATED! I don't leave reviews, but feel like I owe it to others that are about to go there. The single star they get is for the service...

If a place is less than 4 stars, I'm more likely to not write a review than say something negative. By and large, I believe people do work hard and try to make a positive experience. Maybe I came in on an off night or I was tired, jet-lagged, not in the mood. I guess I'm sharing this only to temper the hype. There's nothing negative to say. You will get a good meal and will most likely enjoy yourself. Good location. Hip vibe. And in all honesty, the food was solid. Unfortunately, it was not exceptional. And that's what we were expecting based on the price and reviews. I get that you pay a premium for whatever you get in Vail, but more often than not, we have felt there's been some sort of "added value" in the extra spend. Not so much here. I do want to recognize Barron, our server. He was excellent. He provided the type of service we were hoping for.

For dessert you have to try the shaved ice, it's interactive and tasty. But everything on the menu we tried was out of this world. We will definitely be back!
