Edge Steakhouse Las Vegas – A Cutting-Edge Symphony of Steak, Spirits, and Service

Stepping through the elegant doors of Edge Steakhouse, nestled within the Westgate Resort & Casino, I was immediately filled with a sense of anticipation and excitement. The dining room, with its refined modernity and sleek, clean lines, exuded an air of sophistication. The moody ambient lighting, casting a warm glow across sumptuous leather seating, created an inviting atmosphere that set the perfect backdrop for what would unfold as one of the most memorable dining experiences I've had in Las Vegas.

Legendary Libations

No culinary journey at Edge would be complete without indulging in its innovative cocktail offerings. I savored their signature take on the classic Old-Fashioned, delightfully crafted as La Cosa Nostra: a harmonious blend of Buffalo Trace Bourbon elevated with a velvety Amaretto float. Subtle chocolate bitters and a whisper of orange zest played in perfect balance while the drink was crowned with a decadently "filthy cherry." The pièce de résistance was the oversized ice cube, meticulously engraved with the steakhouse's logo.

Starters That Build Excitement

Our meal began with the arrival of warm, croissant-style rolls paired with house-churned salted butter that was both velvety and savory—golden, pillowy, and utterly irresistible.

The Jumbo Lump Crab Cake was a delicate marvel; the sweet, tender crab meat danced effortlessly with creamy avocado aioli, bright lemon crème fraîche, and crisp cucumber ribbons. Each bite was enlivened by a refreshing citrus flourish that teased the palate and set the stage for the culinary delights to come.

Next, the Wedge Salad arrived as a classic reimagined—crisp iceberg lettuce glistening under a drizzle of silky ranch dressing, adorned with jewel-bright heirloom tomatoes, crumbles of tangy Stilton blue cheese, and shards of smoky Nueske's bacon. This symphony of textures and flavors, with its perfect balance of opulent richness and tangy burst, left us intrigued and excited about the culinary delights to come.

In another exquisite prelude, we indulged in French Onion Soup, a masterful creation. Sweetly caramelized onions swirled in a rich, complex broth laced with dry sherry, all crowned by a bubbling roof of Gruyère cheese. Here was a dish that was both comforting and sophisticated, setting a high bar for what lay ahead.

Entrées & Sides: A Grand Crescendo

The evening's pièce de résistance was undoubtedly the Dry-Aged, USDA Prime New York Strip, a stunning 20 oz—bone-in masterpiece. Cooked to a perfect medium-rare, the exterior sear revealed a symphony of flavors kissed by the Maillard reaction, yielding a steak so tender and succulent it felt as if I'd been transported to another realm of carnivorous delight.

Accompanying this culinary masterpiece were two luxurious accompaniments that further elevated the experience. The Black & White Truffle Mac & Cheese showcased radiator pasta generously bathed in a velvety sauce crafted from white cheddar, Gruyère, and Parmesan. Earthy black truffle shavings and bright chives punctuated the dish, all tied together with a hint of rich demi-glace that lingered on the palate.

The Grilled Asparagus Béarnaise, with spears charred to smoky perfection, was generously drizzled with a lush béarnaise sauce. Charred lemon wedges offered a burst of acidity that cut through the richness, creating a perfectly balanced accompaniment.

Celebrating an early Father's Day at Edge Steakhouse was nothing short of spectacular. Every detail—ranging from the first sip of the handcrafted cocktail to the final savory morsel of steak—was executed with precision, passion, and an exquisite personal touch.

Our daughters were at a dance competition at the west gate in Las Vegas where there are very few dining options, one is the Edge Steakhouse and the other is Fresco Italiano, both managed by the same people. The night before, myself & 4 other moms spent over $400 at the Edge Steakhouse. We had about an hour before awards & 6 of the moms went to the bar at the Edge to have some drinks & appetizers. The bar was completely empty & as soon as we got to the bar, the manager started putting reserved signs all over the place. We ordered drinks and the bartender seemed annoyed with us from the very beginning, he kept rushing us to order and leave & one of the moms went again very nicely to ask again about the empty table & they said we could not sit there because that table was reserved for VIPs in case they came in. At that point, they asked us to leave. They went as far as too pay for the last drinks we ordered to get us out. Turns out the lady in the end of the bar is the bartenders girlfriend, who seems to be a regular at the bar. One of the moms overheard her saying get these women out of here, especially because they are speaking Spanish. We decided to leave because they were mistreating us for no reason, probably because we are Hispanic. At that point, we went next-door to the Italian restaurant, and we saw the manager of the edge following us over and whispering in the hostesses ear to not let us in there as well. When we asked for a table there the lady said I’m sorry there is nothing here for you. The restaurant was completely empty. We come from Miami Florida, we had never felt discriminated against like we did that evening. We are very decent moms who were there to spend money & have a nice time before having to run back to our daughters awards. However, it doesn’t end there, once they told us that there was nothing for us at the Italian either, one of the moms realized that they dropped their earrings at the bar at the edge, and went back to look for it. The bartender’s girlfriend at the end of the bar started to complain and say “oh my god they’re back I can’t believe it, tell them to leave!” They did not even let us look for...

My wife and I had an excellent experience at Edge. If you want to have one of the best meals of your life, this is your place. My mouth is watering thinking back on our experience. To start our evening, we were warmly greeted by the manager, Shaun. After settling in and looking over the menu, we decided to do the chef’s tasting and it was amazing. Chef Steve came out and asked us about preferences and allergies. Our waiter, Bobby, and supporting staff were attentive to every detail.

We started the meal with two salads and beef tartare. The heirloom tomato salad was amazing. The burrata cheese and avocado played off the white balsamic marinated tomatoes perfectly. The baby beets salad was great and the pistachios added a nice twist. Now for my favorite dish, the wagyu beef tartare was perfection. Yes, perfection. It melted in your mouth and the caviar added a pleasant pop with each bite. Seriously, don’t skip this. Our next course was the seared scallop. It was cooked on point and the chorizo topping added a nice different change from other seared scallop dishes that I’ve had. For the main course, our steaks were prepared to our requested preferences. The side of short rib mac and cheese was incredible. It was very cheesy and had a good amount for meat. The pickled jalapeno added a nice touch of heat. For dessert, we had the crème brulee and raspberry cheesecake. The crème brulee was tabled flaming which always adds a nice presentation touch. Working in NYC, I’ve had a plenty of cheesecake and this one was phenomenal. Hats off to the pastry chef as they crushed it with this. The cake wasn’t too heavy and the crust wasn’t too crispy. The best part was the raspberry sauce and the freshness of the raspberries themselves. The berries tasted as if they were freshly picked before coming to the table. The sauce wasn’t too sweet and had a nice tart. It was the perfect end to the meal.

Again if you want a top notch meal, come to Edge. The modern décor, comfortable atmosphere, attentive staff, and amazing food, you will not be disappointed. We can’t wait to return during our next...
