I feel like I could eat here everyday for brunch if I live in Sarajevo. I secretly notice that’s what most of the locals are doing and I am jealous. I did my homework prior by reading the reviews and simply asked for a mix platter for two to share with my partner. We got to try a total of 9 to 10 different items. It ranges from your standard meat stuffed vegetables to staples like rice and pasta and also other sides like cream spinach and giant meat patty. We couldn’t miss out on the veggie power packed soup either. All the dishes are nutritious and hearty. It feels like you are eating right out from a Bosnia’s grandma kitchen. What a wonderful first meal to kick off our 7 days Bosnia trip!

The food tastes like proper home cooking – hearty, flavorful, and just incredibly delicious. If I were handing out Michelin stars, they’d definitely get one (maybe even two!). Super clean and full of authentic, traditional vibes. That said, the service wasn’t great – the staff seemed a bit unhappy and rushed, not very friendly. It felt like they just wanted to get things done quickly and move on. Still, I’d absolutely go back – the food is totally worth it.

Authentic food, staff and atmosphere. Had a hearty brunch here the other day and didn’t pay a lot for it. The staff was very helpful as I was almost totally unfamiliar with Bosnian dishes. The place is small and I ended up sharing my table with Muamer and Maxim, a grandfather-grandson duo, visiting their home country after years. While everyone can debate the food content and quantity, overall it’s amazing that such a genuine place exists in the middle of a touristy area where visitors get tricked. Only downside is that they close early - but that just reinforces their credentials.

Bevallom korábban nem tudtam mit jelent az "aščinica". Utána kellett néznem, hogy ez valójában török kifejezés, amely "olyan kifőzdét jelent, ahol hagyományos ételeket kínálnak". Szarajevóban a XV. század vége óta vannak aščinica-k. Ajánlásra érkezünk Hadžibajrićékhoz. Az étterem a Baščaršija turistákkal leginkább fertőzött részén van, no de ez az étterem előbb volt itt a turistáknál, mondjuk így: nem a konjunktúrára jöttek ide. A relatíve kis éttermi térben páran falatoznak, látszik, hogy többségük helyi lakos. Odamegyünk a pulthoz, szétnézünk, kérdezünk. Többek között elhangzik a titokzatos "sagan dolma", amit aztán össze tudok kötni a darálthússal töltött hagymával (merthogy ezt nemigen láttam még máshol). Leves, azaz csorba után érdeklődünk: kétfélét mutatnak: pacalleves (škembe čorba) és a Bég-levese (Begova čorba). Mindkettőt kipróbáljuk....én a pacalt. Sárga alapra (sűrű krumplilevesnek mondanám) öntik rá a pörköltszerűen elkészített pacalt. Jó kis anyag keletkezik, nemkülönben az íze is rendben van. Másodiknak fasírt spenóttal (Ćufte sa spinaćem) és egy birkapörkölt krumplival. Én nagyon elégedett vagyok a pörkölttel. Az igazság, hogy ennék még, kicsit gyorsan fogy el. Az adagok valójában nem nagyok, nem az a "túletetős" étterem, de rendben van ez így. Éhesek sem maradtunk készek vagyunk az újabb hódításokra, de mielőtt (fizetés után persze) távoznánk kicsit szétnézünk a pár fénykép között, és így fedezem fel Habsburg Ottó (fekete-fehér) képét, aki maga is megfordult itt. Rossz hely nem lehet, ha ő is fontosnak érezte eljönni ide.

Már itthon olvasom Hadžibajrićékról, hogy mintegy 160 éves múltra tekint vissza a vállalkozás, és most a kilencedik generációként először nő vezeti: Mersiha Hadžibajrić. Sorban így jöttek: Bajro, Mustafa, Avdaga, Mehmed, (I)Smail, Muhamed, Ferid, Namik és végül Mersiha. Az alapító Bajro állítólag valamelyik szultán szakácsaként érkezett a "Saraj seher"-be 1860 körül. Nagy tekintélyre tett szert aktív évei alatt, majd érett fejjel teljesítette a hadzsot, ami után vissza is vonult Mustafa fiára hagyva a folytatást. A receptjük: nagyon kevés fűszert használnak, és azt tartják, hogy a húsoknak az elkészítésük során elég a saját zsiradékuk, nem kell hozzáadott zsír (valóban: nem éreztem "zsírnehéznek" a birkapörköltet). Állítólag a II. világháború előtt havonta párszor repülővel ment az étel Belgrádba a Karađorđević dinasztia asztalára. ...és emiatt azt mondja a népnyelv, hogy a legnagyobb különlegességük éppen az, hogy a pórnéptől (raja) kezdve a királyokig egyaránt szeretik mártogatni a helyi lepényt (szomun) a szaftba, amit...

A nice place in the city center hosted by a man and a woman who bring visitors inside the traditional bosnian cuisine by offering many tasty dishes and of course a lot of kindness. The place is tiny, chairs too, so you should go there early in the morning, between breakfast and lunch, or soon after 2 pm. Consider there is not take away, so as you sit down and eat, make sure you leave your place in almost 20/25 minutes as people increase. A lot of Bosnian people come here to eat, and this is a reason why every tourist who likes typical dishes should try their food. Essentially you choose a meat or a vegetarian mix, then you pay in base on that: there a lot of options, I suggest mashed potatoes, peas, rolls—both vine leaf rolls and stuffed vegetables like peppers—and maybe even some...
