Great little spot for ramen in the Sheung Wan area. Their signature soup is made from pork bone and it's both fragrant and flavorful. The broth pairs with the noodles and the toppings perfectly. You can also choose from the thickness of your noodle, as well as it's doneness. I always opt for extra firm as I enjoy the bite; and they did not disappoint here. Their cha siu is charred nicely and has good pork flavor; but the star in my opinion was the jar of takana that was on the table. The spicy mustard greens are a must if you eat any kind of Kyushu style ramen. They will also have seasonal ramens such as oyster ramens and black truffle ramens. I opted for the oyster ramen and the oysters were sweet and plump; the flavor of the oysters also had permeated the broth bringing a refreshing seafood taste to the pork bone broth. Would definitely come back, great ramen!

I have no clue how close it gets to a true Japanese style/taste but, regardless, Kuma is my favourite ramen spot in Hong Kong and has retained that place for the past eight years. The pork-based broth is absolutely amazing and makes you want to drink it as is. The noodles are tasty and cooked to perfection (you can choose how hard or soft it is). I always recommend the diced pork instead of the slices, somehow I feel like I get more pork and less fat (very white guy perspective, here). I always take an extra egg to go with the dish because it's so good. You WILL feel stuffed after all that, though... which is something I always look for in a good restaurant :) Price-to-value ratio is unreal, at sub-100hkd for what I considering the best ramens you'll find in HK.

Although I am not a big fan of Japanese ramen but I am willing to try and include this type of food on my set of reviews. First I am confused is “Kura” or Kuma Ramen🧐At this end I think Kuma should be the correct name. The soup tasted a bit salty for me but I’m sure lot of people will still love it. The pork is super tender but super thin…. Not sure if this is supposed to be, as it’s abt 1/5 thickness of what I normally eat from the other shop, not sure the egg is also not supposed to cut open to serve or it’s a new style to serve🤔. Overall I think it’s a one time visit restaurant for me. (ps. If shop owner/management see this review, pls clean your ceiling A/C more regularly, the thickness of the dust is way beyond the standard)
