Vission Bakery: The Emperor's New Pastries - An Overhyped Disappointment
Let's cut the Instagram-filter nonsense. Vission Bakery, the supposed darling of the Hong Kong online food scene, is nothing short of a monumental letdown. Having succumbed to the relentless hype surrounding their baked goods, I subjected myself to a quartet of their supposed masterpieces: the Egg Custard Tart, Light Pistachio Cheesecake, Triple Pistachio Croissant, and Kinako Azuki Mochi. All consumed on the same day, at a perfectly reasonable room temperature, and all delivering the same resounding message: don't believe the hype.
The Egg Custard Tart, a Hong Kong staple, was an insult to its heritage. The "silky" custard was anything but – a lukewarm, slightly rubbery affair with a texture that hinted at a rushed preparation. The pastry base, touted as flaky, was dense and strangely chewy, offering none of the buttery crispness one expects. The flavour profile was muted, lacking the rich eggy sweetness that defines a good custard tart. This wasn't a comforting classic; it was a culinary crime.
Moving onto the supposedly "Light" Pistachio Cheesecake, the lightness was the only accurate descriptor. The "pistachio" element, however, was a phantom. A faint, almost imperceptible hint of something vaguely nutty was all that remained, drowned out by a bland, almost chalky cheese filling. The base, again, was a textural disaster – crumbly in the wrong way, lacking any discernible flavour to complement the supposed star ingredient. This wasn't a delicate, nuanced cheesecake; it was an exercise in flavourless mediocrity.
The Triple Pistachio Croissant was perhaps the most egregious offender, a Frankenstein creation that promised pistachio paradise but delivered a confusing and ultimately unpleasant experience. The layers, far from the airy, buttery ideal of a croissant, were dense and slightly greasy. The "peanut butter" filling was assertive and completely overpowered any semblance of pistachio cream, which was sparse and tasted artificial. The "some other filling" was an unwelcome mystery, adding another layer of textural and flavour confusion. This wasn't an innovative indulgence; it was a poorly conceived and executed mess.
Finally, the Kinako Azuki Mochi offered a different kind of disappointment. While the mochi itself possessed a decent chew, the kinako (roasted soybean flour) lacked its characteristic nutty aroma and flavour, tasting stale and almost dusty. The azuki bean filling was overly sweet and pasty, lacking the natural earthiness that balances the sweetness. This wasn't an intriguing fusion; it was a textural mismatch with muddled flavours.
To put it bluntly, Vission Bakery's offerings are a triumph of marketing over substance. Their visually appealing pastries, plastered across social media, bear little resemblance to the disappointing reality. The pastries are not what they claim to be, the bases are consistently subpar, and the flavour profiles are either wildly inaccurate or simply bland.
Consider this your hard-earned warning: Don't be fooled by the online buzz. Vission Bakery is an internet sensation that fails spectacularly to deliver on its promises. Your taste buds, and your wallet, deserve better. Instagrammable goodness. I bought this as it was a recommendation from the lovely staff at the counter during my visit. Not only does it look great. It tastes amazing 🤤
Breakdown🤔💭: The Brioche Feuilleteee Tart Shell was flaky and light but rigid enough to hold up all the ingredients as you devour it. The vanilla cream was smooth and custardy. It felt like I was eating a vanilla custard cake midway through.
The use of shortbread cubes and sugar crunch pecans to add a textural dimension to the pastry was fascinating. It added an extra depth of flavour overall too.
But the star of the dish, the Leche Flan, was the Leche Flan on top! (See what I did there?). It reminded me of the Leche Flan my mom used to bring home from sari-sari stores back in the day.
Bring some hand sanitisers and tissues! You're going to want to eat this with your hands. Trust me; it tastes better that way!
I'd like to see how these up-and-coming pâtisseries will innovate with new flavours and textures that Hong Kongers will fall in love with.
The most successful trendsetter that comes to mind is the mochi cookies by Twinkie Cookies—smartly integrating an Asian favourite texture of mochi into their cookies.
It's about time we see flavours such as Ube (purple yam) from the Philippines, Taro from Taiwan, Pandan from Southeast Asia, Thai Milk Tea from Thailand, etc., integrated into these pastries.
Whoever popularises them first will win over new fans, including me.

What we tried: 👍 Mochi Matcha Danish [ Brioche Feuilletee, Matcha financier, Molten matcha sauce, Mochi, Half baked matcha cheesecake ] Absolutely phenomenal and the hype is real. Break the danish apart to reveal silk custardy matcha, a thick slab of chewy mochi and buttery pastry layers, and watch the molten matcha sauce ooze out. Warning though, it’s gonna get reallly messy to eat but it’s definitely worth it. The intense matcha flavour is real and you can definitely taste the mellow earthiness and grassiness with a touch of subtle sweetness. Not too bitter, not too sweet, just the perfect ratio of everything. The matcha and mochi go so well together, a heavenly pairing. Definitely a must try in Hongkong, it quite literally might be my favourite matcha pastry ever.
👍 Canelé Another exceptional pastry with a crispy caramelised shell and a tender, honeycomb custardy interior. The rum and vanilla notes are perfectly pronounced, and this was one fantastic canelé! Definitely recommend getting this too.
👍 Chewy cookies Sweet, delicious and slightly savoury. Great layers of texture, with a nice crunch from the exterior which held up to some of the heat, and a chewy gooey soft centre. Everything you’d want from a cookie!
👍 Mini Oreo Donut Holes No fillings inside, just mini donut bites coated in oreo and sugar. Simple but delicious and I’d definitely recommend this as a sharing snack. Their donuts are criminally underrated!
