I went to La Chaise Haute for lunch with my girlfriend, and eating there is the foundest memory of our trip in Paris. The decor is minimalistic yet refined, with maybe a paiting on the wall and a sculpture on a table, to avoid distraction from the real art in this restaurant: the plates.
The plates are marvels to look at, and a pleasure to eat, so much we wiped them clean with fresh bread. Each dish come with careful attention to vegetables and textures with sauces and foams that danced on our palate at every bites; sign that a great chef is ruling the kitchen.
Everything we ordered was excellent, and there are a couple of dishes we will remember forever. We were blown away by the egg parfait and by the lamb confit. Every element was excellent on its own, and magnified when together, so much we would have been happy with just the egg or the foam sauce that comes with it (or even just the lentils!), and getting all at once was divine. The lamb was the softest and the tastiest we had, so much we would have had our money worth if it was just thrown on a plate with nothing else, but no, it was served with a zucchini mousseline and the curried veggies that were so good it got us us excited about some side veggies.
The deserts were also incredible. The Paris-Brest alone is worth booking a table.
