#114 in my Michelin Stars Challenge in Paris. (follow me for the other reviews and challenges). Genuine. What’s interesting here? First, it s how genuine the chef is. I do not have a Tv, I lived abroad so the French Tv star are completely unknown to me. I could not care less because I need to taste and not see. The thing is that this chef is quite well known. Booking here is quite a challenge in itself. But once there, I had the pleasure of seeing the chef in the kitchen. It may seem normal but it’s not necessarily the case when fame arrives. I also witnessed the way customers were looking at him, I even witnessed a person giving her cv with stars in her eyes. But the most important thing I witnessed was that the chef was as humble and genuine as one can be. He did his table tour (again, not everyone does that) and he was genuinely kind and open. Honestly, with this level of fame, being so humble, it’s a super power. So to those who went there because they know him and are reading this review : he does not seem nice because you’ve seen him on Tv, he’s genuinely nice even to a guy like me how did not know him when I walked through the door. Genuine just like his cuisine. The spices add a character without becoming the character. They do bring more than a note, they are at the same level as the main ingredients. But they do not overpower the plate and become The ingredient. His usage is really masterful and quite worth the visit one it’s own. The restaurant would be classified as exotic. But between Gastronomic and Bistronomic, it would be a Bistronomic. The spirit is closer to the Parisian relax, than a bourgeois one. Also technically, the tables without tablecloth, the ratio waiters/customers, the sound level, it’s really in the Bistro spirit. But it completely does make sense, and I’m not sure it would feel right otherwise. It’s perfect for friends, family and couples. An already very solid one star on his own. Edit 2023: went back and it’s now a top tiers one star

Ça fait depuis l’ouverture de MoSuke, que j’en entends le plus grand bien, sans trop savoir pourquoi, et que je cherche a réserver une table sans trop de succès.

C’est après un long séjour hors de France qu’à mon retour, je me suis lancé dans la mission d'obtenir une table. Chose qui s’est avérée plutôt simple à condition de savoir que les créneaux non confirmées se libèrent le matin tôt et qu’il faut donc être matinal et réactif.

Arrivés à MoSuke, nous avons été accueillis comme il se doit par un serveur en costume avec le sourire et une courtoisie de mise. Nous avons eu le temps d'apprécier la brigade qui s'affairait dans les cuisines situées juste à droite dès l'entrée du restaurant.

Nous avons été installés dans une des alcôves où sont logées les tables pour deux. La banquette en angle donne un semblant d'intimité dans un restaurant lumineux mais relativement étroit sans pour autant s'y sentir étouffé ou être perturbé par les discussions des tables voisines.

Les menus nous ont été remis sans la carte des vins. Nous avons opté pour le menu Hivernage avec 2 verres de vin que nous avons laissé le sommelier piocher dans la carte des vins (au lieu de l'accord mets vins qui lui propose pour un pris très abordable trois verres de vin).

Les plats se composent notamment d'un poisson servi en sushi et d'une viande rouge dont la cuisson m'a rappelé mes séjours au Japon. Car c'est l'impression qui m'est restée. La finesse et la précision des cuissons sont parfaites et la puissance gustative des réductions est subjuguée par un mariage original mais particulièrement réussi entre épices et piments qui rappelle certains plats africains.

Ce clin d’oeil aux origines africaines du chef se retrouve aussi dans le dressage des plats avec leurs éléments explicatifs comme en comporte l’art africain (une tuile en forme d’arêtes de poisson ou de langoustine ou une fleur taillée en héron stickée sur l’œuf parfait servi en entrée). Le tout est présenté avec un esthétisme géométrique épuré qui nous a réjoui par l’alliance aboutie des couleurs et des textures.

L'enchainement des plats s'est déroulé avec des pauses suffisamment courtes pour ne pas attiser ni notre faim ni notre impatience. Le personnel s'est occupé à tour de rôle de la desserte des plats. Cette organisation a eu le mérite de maintenir la cadence des plats régulière et constante. Toute l'équipe de serveurs est restée toujours à portée de notre table pour répondre à nos demandes.

La vaisselle est belle et fonctionnelle. Elle dessert les plats en contribuant à la présentation mais aussi à la composition des plats, que soit en mettant en avant leur dressage mais aussi les accompagnements.

Le chef Mory Sacko fait honneur à ses convives en s'occupant de servir un des plats lui-même. Dans notre cas, Mory Sacko nous a présenté et dressé le dessert. Avoir la chance de rencontrer en personne ce chef étoilé, que je n'ai jamais auparavant vu ni même à la télé, avec son sourire et sa générosité a été une expérience marquante que nous ne sommes pas prêts d'oublier.

MoSuke est un restaurant qui a su préserver son attrait tout au long des années. C’est sans surprise que j’ai découvert qu'il s'était vu décerner une étoile au Michelin très largement méritée tant pour l'originalité des plats proposés que pour la maîtrise technique de son chef.

MoSuke est à l'image de son chef qui vient s'enquérir personnellement du bon déroulement du repas auprès de ses convives qu'il écoute attentivement tout en restant concentrer sur le dressage final du dessert. A truly beautiful meal. Thank you thank you thank you. The African/French/Japanese influenced food symphony is creative, original and full of flavour and flair. You are served a fixed menu of (I might be off my count a tad) three amuse bouche, nine main courses and three deserts. Each dish is carefully crafted, beautiful to behold and absolutely delicious. The dishes are small mouthfuls of flavour and perfection, unique and surprising. My only small critique would be that there is simply to much deliciousness. We were absolutely sated by the time we walked out. Maybe 2 or 3 dishes fewer would do the trick. Though I would be hard pressed to decide which ones to leave off. The service was impeccable, friendly and informed. The wine selection is expensive but the Leeu Passant Stellenbosch Chardonnay the sommelier recommended was worth every penny, I only wish we had ordered it in advance so that it could have been opened a bit before our arrival with every minute it became better and better.
