Service It was really good up til the final course where after we felt we were being ignored/forgotten unfortunately. Which ruined the experience. We were waiting atleast 30mins before we then had to call someone over and ask for the bill. A further 10mins they bring out truffles. More time passes and we had to ask someone over again to see about the bill.
Food review We asked for two wines to be paired with the dinner and the choices were fantastic
Amuse buche We got asparagus cannelloni, buffalo mozzarella and zaatar. It didn't taste like buffalo mozzarella but the taste was good. Was nice and light.
Starters Grill calcot, mackerel and mustard ice cream violette. The mackerel was nice and the ice cream was a weird but delightful experience.
Ebersheim snails and pinot noir from alsace sauce. The dish was nice but felt the sauce was over powering. Could have just served a red wine instead.
Fish Arctic char from heimbach sources, peas, pink ginger and cardomom. The fish was good and a modern take on fish with mushy peas my mums favourite. I wouldn't be a fan of peas myself but can't hold that against the dish.
Meat Pigeon from theo kieffer, cabbage and camerise juice. Pigeon was served three ways; leg, breast, and the rest in a puff pastry shell. All delecious. Again the sauce was a bit over powering even with the strong flavour from pigeon.

Michelin 1 Star approaching the experience of a 2 star.
The food is forgettable. It's well crafted, but not expressive. High quality products, but nothing you want to revisit. You might even just want McDonald's afterward. And no chocolates or gift to finish. (even if it's just the printed menu, candy or something used in the food to remember them by).
Wine list is decent, but prices are near 3-4x retail for bottles, and the by the glass menu is very poor (only 1 crand cru). They are pushy to buy wine - to the point it's obvious they need to because they don't naturally sell enough. Their confirmation of this tells me they would benefit from restructuring their wine menu. There are many affordable and excellent Alsacian wines that would greatly enhance the diner's experience AND net more profit.
I.e. marvel deiss Pinot noir is around €50. I would pay €125 and probably order a second bottle. Pierre Frick costs half that, but could charge the same. Albert Seltz, Boeckel, Karcher grand crus are very affordable and excellent quality. By improving quality and not ripping people off of the markup, diners will buy more. You'll actually make more money! (And have happier diners). I, for example, refused to pay over 3x retail for wine and chose water instead.

About the food. We’ve ordered 2 menus of 4 courses, so 2 starters, 2 fish, 2 meat, 2 deserts, which makes it 85% of what the restaurant offers. I’ll go one by one. The octopus was kinda from the tin from Carrefour to me. Fois gras was average, I had one for breakfast for 9 euros and still it was better then Crocodile’s. Tuna was frozen, the tomato garnir was making the dish even worse. Lobster was fine and it’s the only thing that actually tasted almost like it should be. Deer had basically no taste, and the veal to me was more like a pork, not to mention the texture like rubber sole. The deserts were quite average, you can find the same quality or even better in any simple brasserie on the streets of Strasbourg. When I reacted the waiter offered me the shot of schnapps.
Overall to me this thing seemed more like a luxurious fraud with a fake smile on a face of the ones who where running the show. So 3 hours of humiliation and spoiled special dinner.
